Sunchoke or Potatoes
Sunchokes are a nutty flavored tuber that is best cooked thoroughly through roasting or frying. The variety we grow is a magenta color.  I have linked more info to help you decide. Potatoes are from Emily Tebogt.
Swiss Chard
Small to medium sized, cut and bagged
Onions
A 1lb bag of yellow onions from Emily Tebogt
Your Choice of Herb
Pick One: Tulsi, Sage, Mint or Chives
RECIPE OF THE WEEK
▢ 1 tablespoon extra virgin olive oil
▢ 2-3 carrots finely diced
▢ 2 ribs of celery finely diced
▢ 1 onion finely diced
▢ 3 cloves of garlic minced
▢ ¾ pound fresh Italian sausage casings removed (spicy or sweet is fine)
▢ 1 tablespoon tomato paste
▢ 2 teaspoons chopped fresh thyme
▢ 1 teaspoon chopped fresh rosemary
▢ 2 cans Great Northern Beans rinsed and drained
▢ 4 cups low sodium chicken broth
▢ 1 bay leaf
▢ 1 bunch swiss chard stems removed and cut into ribbons (kale or spinach will also work)
▢ Coarse salt and freshly ground pepper

Heat oil in a large pot over medium heat.  Add carrots, celery, onion and garlic to the pot.  Cook until onions are translucent and vegetables are begining to soften, about 5 minutes. Add sausage and cook until browned and cooked through, about 7 minutes.  Add tomato paste, thyme and rosemary.  Cook for 1 minute. Add beans, broth, and bay leaf.  Bring to a boil and reduce to a simmer.  Continue to simmer for 20 minutes. Add chard and simmer until chard is tender, about 5 minutes.  Season to taste with salt and pepper. Serve.

FARM UPDATES
Just two more shares to go after this! It is hard to believe! I got in an unbelievable amount of seeds this year and still have another round to do. I will start digging medicinal roots this week for winter teas and tinctures. We still had decently warm weather this past week so we waited on the big root crop dig for this upcoming week and my partner in crime (adam) will be back to help me. I think we are most excited to dig the sunchokes. They are just so vibrantly colored like buried treasure! We have lots of carrots so you will be seeing them in the remainder of your shares and I have sprouting on the schedule just waiting for our seed order to arrive. I hope everyone has had a chance to enjoy the fall colors.
