FEATURED RECIPE
Ingredients
  • ⅓ cup olive oil
  • 3 tablespoons apple cider vinegar
  • 3 tablespoons maple syrup or honey
  • 2 pinches kosher salt
  • Fresh ground black pepper
  • ½ cup walnuts
  • 1 head Savoy cabbage*
  • 2 apples
  • ½ cup Parmesan cheese shavings (or Pecorino Romano)
Directions
  1. For the dressing, whisk together the olive oil, cider vinegar, honey, kosher salt, and fresh ground black pepper.
  2. If desired, toast the walnuts by placing them in a dry skillet over low heat for several minutes, stirring frequently, until slightly browned and fragrant. Immediately remove from the heat into a bowl.
  3. Thinly slice the cabbage. Core 2 apples and chop them. (If not eating immediately, sprinkle the apples with a bit of lemon juice to prevent browning.) Using a vegetable peeler, shave the Parmesan or Pecorino Romano cheese.
  4. To serve, place cabbage on a serving plate, then top with apples, walnuts, cheese, and dressing.

MEET YOUR FARMERS
Welcome to our joint winter CSA with Olde Furrow Farm & teBogt's Produce & Meat. We are so excited to bring our two farm worlds together and feed your bellies and hearts! So how about some introductions from the people that will be feeding you!
About Emily (teBogt's Produce & Meat)
Growing up helping my family on their dairy and poultry farm, I always knew I wanted to continue farming, but take it in a different direction. In spring 2011 when I was 18 years old I grew my first market garden and sold my sweet corn, carrots and potatoes on the end of my driveway. After graduating from the Nova Scotia Agriculture College with my Plant Science diploma in 2012 I expanded my crop variety and started selling at the Wolfville Farmers Market. Also in 2012 I bought my first 5 sheep the weekend after graduation. Then in 2013 I got my first flock of laying hens and 4 sows and a boar to breed the pigs. It's been a lot of work building my business and acquiring tools to succeed such as cold storage for my vegetables and a greenhouse so I can be at the market year round. I love growing food and this life of a farmer, I knew it was my purpose in life since I was a teenager. I would be honored to provide food for you and your family, so reach out and lets connect!

About Adam & Courtney (Olde Furrow)
Adam came from a farming background but didn't gain any real farm experience until we started Olde Furrow with his parents on his family's land. Adam's background was originally in psychology & poetry but found not all his needs and service was being met. Adam has always been connected to the land so when the opportunity to farm came up it ended up being just what he needed and could be of service to the land and his community.

Courtney grew up in Florida suburbia and only  knew of her grandmas patio garden and avocado tree before coming to farm in Nova Scotia. She attended the horticulture program at NSCC right down the road from the farm to gain some knowledge on how to care for plants while farming for the first time ever. Much like Adam her background in photography left her wanting more, something that gave back.
We have worked with Emily throughout the years. She has supplied our solo CSA on many occasions with her large and beautiful veggies. We have also offered eggs and meat add-ons from her farm. Our farms started operating in the same year where we crossed paths at the Kentville & Wolfville Farmers' Market allowing us space to build our partnership and friendship. Emily & I are strong and independent women (with kind, loving and supporting partners) which allows us a shared perspective but we also have lots of differences that help us grow better and stronger. I couldn't ask for a better farm BFF!

I am so happy we could do this joint winter CSA together because over the past two years Emily has been at the Halifax market on Saturday and we stopped going to the Wolfville Farmers market which meant no Saturday chats. :( On top of us being really busy growing our farms.
