New Resource: Playbook for Guiding Diners Toward Plant-Rich Dishes in Food Service

Producing beef emits 20 times more greenhouse gases than common plant-based proteins, which is why shifting diets toward containing less beef, and more plants, is an important climate action. To help food service companies support diners in choosing more plant-rich meals, this playbook outlines the top 23 ‘behavior change’ strategies drawing on cutting-edge academic research into how people choose food, as well as insights from experts in the food service industry about what works and what doesn’t. The playbook is designed to be used by anyone working in the food service sector wishing to make changes within their operations to encourage diners to choose more sustainable, plant-rich options — including chefs, food servers, managers, sales people, marketing and communications professionals, food operators, distributors, researchers, nutritionists, dieticians, and procurement teams.

Wellness Tip: Show Your Heart Some Love!
With Valentine’s Day just around the corner, many view February as the month of love, but it is also American Heart Month. Heart disease is the leading killer of Americans, taking the lives of 2,200 people each day. In addition, 103 million adults have high blood pressure and 6.5 million are living with heart failure. While genetic factors play a part in cardiovascular disease, the good news is 80 percent of cardiovascular diseases may be preventable with education and action. Simple lifestyle changes can make a big impact when it comes to heart health. Show your heart some love with these 5 tips.

Healthy Recipe:
Sweet Potato Peanut Stew (or "Mafe" in West Africa)
Total Time: 30 minutes

Ingredients
  • 2 teaspoons extra-virgin olive oil 
  • 1 medium-size yellow onion, diced 
  • 2 garlic cloves, minced 
  • 1 large sweet potato, chopped into medium-size cubes 
  • 2 large carrots, cut into thin rounds 
  • 2 green zucchini, cut into thin half-rounds 
  • 1 small can (15oz) of diced tomatoes, no salt added 
  • 2 cups low sodium vegetable broth
  • 1 tablespoon curry power 
  • ¼ cup natural peanut butter 
  • 3 sprigs of fresh thyme, minced, or 1 teaspoon dried thyme 
Instructions
  • Heat the oil on medium heat and sauté the onion and garlic until translucent.
  • While the onions and garlic cook, chop up the sweet potato, carrots, and zucchini. 
  • Add sweet potato and vegetables to the pot; sauté for 3-4 minutes. 
  • Add the diced tomatoes, vegetable broth, and curry powder, and bring to a boil. Cover and simmer for 10 minutes. 
  • After 10 minutes, add the peanut butter and the thyme to the stew. Let it cook, covered, for another 3-5 minutes. 
  • Serve and enjoy!
