To appreciate white Burgundy, begin with demystifying the name itself. If you’re looking at a bottle of white Burgundy, know that by French law, the grape is 100% Chardonnay.  That’s the simple part.  Next, be aware of another French law: wines are named after the place where they are made. Within Burgundy there are four regions where Chardonnay is produced: Chablis, Mâconnais, Côte Chalonnaise and the Côte de Beaune. 

Chardonnay has two personalities in Burgundy. The first is bright and light, with a clean acidity. Might we say crisp, but in a French sort of way? This profile comes with a stainless steel-style winemaking approach. It’s unoaked. The Chablis and Mâconnais regions are your sources for these très chic, “we love chèvre, delicate fish and those enticing munchies you serve at apéritif time” wines.

The second personality is the barrel-style Chardonnay. This wine celebrates its vinification with rich, full and elegant flavours. These are the white Burgundies that want to be paired with your butter poached lobster, veal in a light cream sauce, and your Brie and Camembert. They hail from the Côte de Beaune or the Côte Chalonnaise regions.

There’s no other place in the world where terroir is better expressed than in Burgundy. The basis of this terroir is above all the sub-soil and soil from which a secret alchemy of colours, aromas and flavours is created.

Vibrant and energetic with excellent tension, it's a ready-made delight for shellfish.

"Still very youthful, indeed with a touch of sulphur still on the nose, this is neither over nor underripe, yet shows the profile of both, like a wine moving at two speeds, with both green and yellow-fleshed fruit, sharp, juicy acids, and broad, mouth-filling palate. Flavour intensity is excellent — there's no denying the depth and concentration here, nor the length. I'd suggest another 2-3 years in the cellar. Chablis is an excellent food wine. This fresh white wine from Burgundy, France pairs well with seafood and fish, as well as local delicacies such as snails and cheese. 

Chablis is a specific style of Chardonnay grown in the northernmost district of Burgundy, France. The climate here is cool, producing dry white wines with high acidity. The Chablis wines are often described as having a mineral, salty note. “Steely” is a common description of Chablis wines. They are not as fruity as Chardonnay wines produced in warmer wine regions.

Most Chablis wines are vinified in stainless steel tanks and not matured in oak. The style is characterized by its minerality and richness from its terroirs of chalky soils, with flavours of citrus, pear, apple and salinity. 

Petit Chablis are grown at a higher altitude than the typical Chablis wines. Lighter and less complex, the Petit Chablis wines are tart, crisp and mineral with citrus flavours. They should be enjoyed young, ideally 1-3 years from release. 

The Grand Cru and Premier Cru wines of Chablis often mature in oak barrels, but the time in the barrels are usually quite short. This style is slightly richer and creamier, but still fresh and mineral. 

Chablis Food Pairing
Chablis pairs with a wide range of food, especially delicate seafood dishes, cheeses and poultry. The key is to keep in mind the following characteristics of the wine: 

High acidity - pair with acidic food (lemon, lime, tomato) or deep-fried, fatty food.
Light to medium body - this lean style is a great pairing for light and delicate fish dishes.
Steely minerality - pair with dishes with lemon flavours and salinity (seafood).

Chablis should always be served cold, ideally at 7-10°C (45-48°F). 

Chablis with Fish
Chablis is a classic pairing with a variety of fish dishes, best served with lemon wedges to enhance the acidity and citrus aromas in the wine.

For Light fish dishes with lemon - choose a Petit Chablis or Chablis.
Deep fried fish - choose a Petit Chablis or Chablis.
Fish or pasta dishes with creamy sauces or butter - choose an oaked Chablis (Premier Cru or Grand Cru).

Chablis with Seafood
If you are looking for a great wine pairing for seafood, Chablis or Petit Chablis are excellent choices. These lean and mineral styles with tart acidity work well with the with salinity or lemon in these delicate dishes.

For seafood dishes prepared in a butter or cream sauce, choose an oaked Chablis (Grand Cru or Premier Cru). This richer Chablis style is also best with lobster.


Chablis with Chicken
Chablis is also a good pairing with poultry. The neutral profile of the wine makes it an especially good pairing for chicken.

Chablis is a fantastic cheese wine, especially suited to soft and creamy cheeses such as Brie, Camembert, and Chèvre. Chablis also pairs well with delicate fresh cheeses like Mozzarella, Ricotta, Feta, and Halloumi.
