Midwinter News from

the Farm

 
Yearning for Color

The lengthening days come as something of a relief, but it is still winter: cold, icy, gray, the landscape a drab palette. Hungry for color, sunsets like this one (caught by my niece Catherine) are all the more striking. Recently, new lambs have added color (and sound!) as well. Most just days old, they are already leaping, hopping, and running around in pack--and, when they tire of that, they yell for their moms. Soon, we'll be dusting off the sap buckets and hanging some test taps on the maples that get the most sun. Sweetness is on the horizon!

More color! Wild highbush cranberries against a bluebird sky, growing beside the upper beaver pond. (The beavers, however, have not been in the neighborhood for almost a year now. We hope they return once the willows and alders grow back enough.)
Speaking of beavers, Bruce has been salvaging trees downed by the beavers to cut for firewood. Nice to get a head start on next year's supply.

A dancing crow? In any case, someone left a cool pattern of tracks in the snow.


SALE: Shoulder roasts, shoulder chops, mutton chops (through March 1, while supplies last)


Shoulder roasts necessitate working around multiple bones, but the tender meat is worth the effort (and they make excellent bone broth afterward). SALE PRICE $8.50/lb (regular $11/lb).

Shoulder chops are easier to manage than a whole roast, though take more care in cooking to maintain tenderness (and they are not as tender as loin and rib chops). SALE PRICE $8.50/lb (regular $11/lb).

Don't be fooled by the label! These mutton chops are from animals that were processed at a year and a half old, requiring that they be called "sheep," but to us they are indistinguishable from lamb chops. SALE PRICE $12.00/lb (regular $15/lb).
 
 

Rugs still available. Lamb cuts in stock & bulk lamb. And garlic!

This coming week we will be our final winter processing, so it is the last chance for a while to buy bulk lamb. Let us know by Tuesday if you'd like to reserve one. Whole lambs $9/lb (approx. 45 lbs), half lambs $11/lb (approx. 20-25 lbs).

We still have a few of this year's woven rugs available, in blackbrown, dark gray, off white, and various striped patterns (including the one pictured above).

Most cuts of lamb are in good supply. And the garlic is keeping well ($1.50/medium head, $2.00/large head).
