RON DISHES ON...
Tonkatsu Ramen / Ron Knerr

Ronin Sushi and Ramen

Opened in 2021 in a former pizza shop location on Main Street in Jeffersonville, Ronin Sushi and Ramen has brought its Asian offerings to our area. As a seasoned veteran of Asian cuisine preparation in a successful family business in Buffalo (NY), the owner Mike Chang brought his culinary skills to Jeffersonville to serve Sushi, Ramen, and other Asian fare to hungry locals. I had taken notice to web posts about Ramen and its growing fandom, so I was here to see what I was missing. (Considering my love of Pho, I was eager to try the Ramen alternative.)

Ronin Sushi and Ramen offers much more than just Ramen with a sizable variety of appetizers such as Edamame, Gyoza, Pork Bao Buns, Popcorn Chicken, Shrimp and Vegetable Tempura, as well as Grilled Teriyaki selections, Poke Bowls, Bento Boxes and a wide selection of Sushi and Sashimi.

...the rest of Ron's column

I visited Ronin on a recent weeknight with our intrepid leader (and Publisher of A Moveable Feast Montco) Stan Huskey. We started with the owner’s recommendation of Takoyaki Octopus Balls - which I later discovered is a popular Japanese street food. It’s typically made as grilled puffs of seasoned batter in pans with rounded impressions to ease preparation. Batter is poured into the formed pan and the chunks of octopus along with onion and ginger are added to each puff before adding the final dollop of batter, then turned to cook evenly outside. The balls were nicely browned with individual pieces of octopus inside, with a distinct umami flavor from the Bonita (dried fish flakes) sprinkled on top along with a dressing of sweet “Worcestershirey” Takoyaki sauce.

We also sampled Gyoza, small pork dumplings lightly browned and served with a side of soy dipping sauce.  This was a more mainstream dish that was well prepared and a good option for those diners who are reluctant to be more adventurous with their selections.

Stan is a Sushi fan, and he went with the Chanel roll recommended by the owner - Shrimp Tempura and Avocado with a White Tuna and BBQ Eel on top of the wrapped rice roll. As an admitted newcomer in this cuisine arena, the Sushi I sampled was good and based on Stan ‘s input, the Sushi offered here is worth the trip based on quality and pricing (I’d prefer a large plate of Beef Carpaccio, with capers, onions, salt, pepper, and olive oil…)

Though many are familiar with the twenty-five cent packets of instant ramen soup, I’d taken notice to genuine Ramen soup offerings in Japanese restaurants, and I was looking forward to trying authentic Ramen for the first time. I chose Tonkatsu Ramen, made with main components of pork and wheat noodles, compared to Pho which is typically made with beef and rice noodles. The Tonkatsu also had a a range of ingredients including bamboo shoots, seaweed, corn, and a medium cooked boiled egg.

While Pho soup base is a rich bone broth with subtle flavors, the Ramen had a much bolder layering of flavors with pork, garlic, soy, sesame, and garlic right up front. The pork (Pork Chasu) was tender and very good - better quality than the beef brisket or flank found in Pho, with complexity of flavor from egg, corn, and bamboo. The similarity of Pho and Ramen ends with a noodle base with a meat broth because they are really two different dishes that are great on their own merit. I’d take a slight nod for Pho over Ramen for my taste, but both very good and I’d order Ramen again.

After the main courses, we sampled two dessert preparations. The first was Fried Banana – Bananas wrapped in a thin dough and fried, then sprinkled with coconut and dressed with a sweet syrup. This dessert qualifies for a reorder as it was a good way to finish the meal.

We also sampled an order of Mochi Ice Cream, made with a sweet, pounded rice dough formed around small discs of ice cream. (Readers may have seen this confection in the local grocery store in the last couple of years as its mainstream popularity swelled.)  The dough consistency is a bit of a surprise if you have not sampled it before, but it bites and chews without difficulty, unlike regular raw wheat flour dough.

Readers are encouraged to widen their culinary experiences and give Ronin Sushi and Ramen a try to sample genuine Japanese cuisine that is well prepared and reasonably priced.
