I recently delivered an online cookery course and interview as part of the Wales Week in London series which was a fantastic opportunity to connect with our community both in and outside of Wales.  I demonstrated some lovely canapes inspired by the Gower landscape using local ingredients including laverbread, cheese and mackerel.  https://walesweek.london/  This series is growing year on year - visit the website to find out more.  We hope to be involved again in 2023.  
Recipe - Savoury Welsh Cakes 
Makes 40, freezes well.  You’ll need a maen/griddle pan. 
  • 175 g SR flour
  • 1 teasp baking powder
  • 80 g Welsh salted butter
  • 80 g grated strong cheddar
  • 50 g finely chopped black olives in brine
  • 1 egg yolk
  • 1 teasp dried thyme
  • 50 g chopped streaky bacon or pancetta
  • ½  teasp cayenne
  • ½ teasp cumin
  • ½ teasp malden salt
Heat a griddle very slowly and lightly butter.  Fry off the bacon in a dry pan until crisp.  Tip it out onto a chopping board and chop finely. Mix the butter and the flour until it resembles fine breadcrumbs. Add the cheese and the rest of the dry ingredients. Add the egg and maybe a little milk to bind.  Roll out to 5 mm thick and cut out into or rounds using a 3 cm crinkled cutter.  Cook on the maen or griddle for about 3 minutes on each side.
