TAKE TWO with SOPHIE & DRAKE

Sophie is starting to share her sofa with Drake--or maybe learning to tolerate him-like a pillow? Both are happy to get back the walk routine now that snow is puddling in tropical MN. Drake smirks over his pot of gold/rainbow headband. (He's Irish at heart)

 IRISH NO-BAKE BISCUIT LOAF
An Irish favorite, served at the B&B in The Accidental Heiress, Page 80

  4 c. broken graham crackers
   3-3 ½ c. dark chocolate  (16 oz.)
   2/3 c. sweetened condensed milk
   1 2/3 sticks unsalted butter

I used cinnamon grahams & Teddy grahams broken in chunks to put in a large bowl. Melt the chocolate/butter mix in a double boiler or microwave.  Pour chocolate over crackers and mix well to coat.  Line 4 sides of a loaf cake pan with parchment paper. Fill the tin with the mixture, pressing down hard with the back of a large spoon or spatula. Spoon any remaining chocolate evenly over the top of the loaf.  Cover with foil & refrigerate overnight.  Keeps well in fridge.
(I give it 5 stars, hoping you give them BACK to me in a book review!)
