Dairy Delights: Roman Layered Cheesecake
The month of April brings with it one of the biggest celebrations in the Christian calendar - that of Easter. Preceding it is the 40-day fast of Lent, which sees no meat or animal products consumed by those who observe. In the Eastern Roman Empire, Lent was itself preceded in Constantinople by e tyrophagos, or 'cheese week', where you were still able to eat milk, cheese and butter (no meat though!). While Lent is already underway, those not observing might wish to try out a Roman cheesecake recipe trialed by Tasting History for a belated 'cheese week'. Observing Lent? Try it out after!
