FABIO'S TABLE NEW "SPRINGTIME" MENU
FABIO'S TABLE offers guests the opportunity to enjoy an intimate multi-course, wine pairing experience hosted by Fabio.
 
In April our NEW SPRINGTIME MENU continues to be the inspiration for this experience,  with new dishes inspired by flowers and the fresh flavors of this season!

The 4th course of the dinner, the Nido de Codornices Con Puré De Guisantes Y Jugo De Hierbas (Roasted Quail Breast, Low Temp Quail Egg, Peas Purée, Herbs Jus), brings oranges flowers to represent the Spring, and a fresh and subtle meat, that is perfect for this time of year, when the weather starts to get warmer. The peas purée complement the dish, bringing color and sweetness.

Fabio chose to pair this dish with the Escaladei (Vi di la Vila), Black Slate, a Priorat wine from Spain. This unusual wine has a small percentage of Cabernet that softens and rounds out the intensity of a traditional Priorat. Perfect for the subtle flavors of the Quail.


A perfect combination to start a special dinner to celebrate the season that brings new beginnings!
 
As always, we will offer a traditional and plant-based menu for all guests to enjoy.
