Egg Bites

Add 8 eggs, 1.5 cups of cottage cheese, 0.5 cup of shredded Mexican cheese, salt, and pepper to a blender and blend until smooth. Pour mixture into greased muffin cups, then add your toppings (we used chopped broccoli florets and fully cooked turkey bacon). Set pan on a baking sheet and bake for at 350° for 20-25 minutes.




The Best Deviled Eggs

  • 12 hard-boiled eggs (made on the stovetop or in the Instant Pot)
  • 1/3 cup mayo (or plain Greek yogurt)
  • 1 tablespoon freshly-squeezed lemon juice (or vinegar)
  • 2 teaspoons Dijon mustard
  • 1/2 teaspoon garlic powder
  • sea salt and freshly-cracked black pepper
  • toppings: smoked paprika and chopped fresh chives
  1. Halve the eggs. Slice the hard-boiled eggs in half lengthwise.
  2. Make the filling. Scoop out the egg yolks and transfer them to a small mixing bowl. Using a fork, mash the egg yolks completely until they form a fine powder. Add in the mayo (or Greek yogurt), lemon juice, Dijon, garlic powder, a generous pinch of salt and pepper, and stir until completely combined. Taste the mixture and season with extra salt and pepper, if needed.  Or if the mixture seems too thick, add in some more mayo or a tiny splash of water.
  3. Assemble. Using either a spoon or a small cookie scoop or a piping bag, fill the inside cavities of the egg whites with the yolk mixture. Sprinkle each deviled egg with a pinch of paprika and chives.
  4. Serve. Serve immediately and enjoy!



Potato and Lamb Casserole

1.Preheat the oven to 180°C (160° fan) 350F, gas 4.
2. Put half of the diced potatoes into a wide ovenproof casserole, then add half of the onions and carrots. Add the meat and season with salt and pepper.
3. Scatter half of the thyme over the meat. Now add the rest of the diced potatoes and onions and finish with the rest of the carrots. Season well with salt and pepper.
4. Add sufficient water to cover the potatoes. Bring to the boil, then cook the casserole in the oven with a lid on for about 2 and a half hours.
5. 30 minutes before the end of cooking time remove the lid and arrange the sliced potatoes neatly on top of the casserole. Scatter with the rest of the thyme leaves and season with salt and pepper.
6. Return the casserole to the oven for the remaining 30 minutes. The potatoes should be cooked and nicely browned. If necessary extend the cooking time by 5-10 minutes.
