FLAN CLUB #3 - Coconut Flan 🍮

Okay, I am way too excited about this recipe (really 2 recipes!). The Flan de Coco one is my own recipe developed in combination with Tia Ines’s version plus a bit of ingenuity because sometimes you can’t find Cream of Coconut. In this month’s recipe card, I give the recipe with Cream of Coconut which is like ‘Coco Lopez’ (the sweet coconut stuff you use to make Piña Coladas). BUT, you can easily make that yourself if you can’t find it and you have more coconut milk! Scroll past the coconut flan recipe for the DIY Cream of Coconut recipe.

Cream of Coconut DIY!*

Cook Time: 7 minutes (Makes roughly 1.5 Cups)

INGREDIENTS

  • 1 can full-fat coconut milk (like Thai Kitchen brand)

  • 3/4 cup granulated sugar

  • pinch of salt

INSTRUCTIONS

  1. Pour ingredients into a small pot and heat on low.

  2. Stir until the sugar dissolves and liquid is slightly reduced.

  3. Store in an air-tight container in the refrigerator. The coconut cream will keep refrigerated for 7 days. Freeze any leftover for future use.
