ISSUE 27 : 22ND SEPTEMBER 2020 | LATEST NEWS FROM HAFREN /////////////// www.thehafren.co.uk

Hi All
Sadly it looks highly likely that we are now entering the “second wave” of COVID-19 in the UK. With colds and coughs thrown into the mix as well, especially with children going back to school to help with this spread, it’s a very difficult situation that many may find themselves in this Autumn. If you are unsure if you have any symptoms then please check the Government website.

Enjoy the days of good weather while you can in a safe and socially distanced way and take care.

If you have anything you would like to go in the newsletter then please send it in to conference@thehafren.co.uk

All the best

Autumn Bounty
As we head into the season of (hopefully) bountiful supplies of fruit and veg from orchards and gardens we sometimes have more than we know what to do with.  This is perfect for making jams and chutneys to last us through the winter months. If you grow tomatoes you may be left with some unripened fruit at the end of the season, don’t let them go to waste, chop them up and make a tempting Green Tomato Chutney. Here is a very easy recipe I use:

Makes:  about 2kg (4lb)
Prep Time:  20 mins
Cooking Time:  1hr 40 mins, approx.

Ingredients:
1kg (2lb) green tomatoes, finely chopped
500g (1lb) onions, finely chopped
500g (1lb) cooking apples, peeled, cored and finely chopped
2 fresh green chillies, halved, deseeded and finely chopped
2 garlic cloves, crushed
1 teaspoon ground ginger
Generous pinch of ground cloves
Generous pinch of ground turmeric
Pinch of salt
50g (2oz) raisins
250g (8oz) soft dark brown sugar
300ml (1/2pt) white wine vinegar

Method:

1. Put the tomatoes, onions, apples and chillies into a large pan and mix together.  Add the garlic, ginger, cloves and turmeric, then stir in the raisins, sugar and vinegar.

2. Bring to the boil, reduce the heat and cover the pan.  Simmer, stirring frequently, for 1 ¼ - 1 ½ hours or until the chutney has thickened. Taste and add more sugar if required (this is down to personal preference!)

3. Transfer the chutney to warm, dry, sterilised jars and cover the surface with a disc of waxed paper, waxed side down, then top with an airtight lid.

Label and leave to mature in a cool dark place for at least three weeks before using (if you can!), or store, unopened, for 6 - 12 months.
