Coming off of a 5 day juice cleanse this was the first bottle of wine I tried in almost a week. Obviously my palate was in a state of panic from all the fresh, fruity, acidic tartness you experience with such a diet.  I had to start somewhere so why not with one of my favorite urban wineries in California. Veggie Sushi was on the menu and I decided to pair it with non other than a "White Zinfandel"  It worked swimmingly. There was a fun blood orange and raspberry tartness going on that tickled my tongue. The skin maceration used during the wine making process created an umami in the wine that just worked so perfectly with the sushi, edamame and dumplings on the table. -Elan

One perk of virtual learning is that we're encouraged to open up a bottle of wine during class, and this is a contender! But I'll definitely save a bottle for when I get the exam results...
