20 Week CSA Share
July 8th to November 18th

2lbs Sweet Potatoes
1 'Honeynut' & 1 "Butterbaby" Butternut Squash
1 Bunch Multicolored Beets
1-2 Turnips
1 Bunch Carrots
Curly Green Kale or Flat Blue Kale
1.5lb Parsnip
1.5lb Onion
2-3 Garlic
Herb Choice (1): Sage, Rosemary, Parsley, Thyme, Chives, Mint or Summer Savory

- 1 small butternut squash, peeled & diced
- 1 Tablespoon + 1 1/2 teaspoons Olive Oil, divided
- 1 Tablespoon chopped rosemary or sage or thyme
- 2 cloves garlic, peeled & grated
- 1/4 teaspoon Salt
- 1/8 teaspoon Ground Black Pepper
- 6 strips Bacon {optional}
- 1/2 Tablespoon Unsalted Butter
- 1 small yellow onion, thinly sliced
- 1 cup Dried Cranberries
- 1 cup Sliced Almonds, lightly toasted (Sunflower Seeds are nice too!)
- 2 cups packed Kale, Chopped
Dressing
- 2 Tablespoons Vinegar (We use more)
- 1 Tablespoon Dijon Mustard
- 1 1/2 teaspoons Brown Sugar
- 1/4 cup reserved bacon fat (Also optional, Just add more olive oil)
- 1 1/2 teaspoons Extra Virgin Olive Oil
- Preheat oven to 450 degrees.
- In a small bowl combine squash, 1 Tablespoon oil, rosemary, garlic, salt, and pepper, and toss until well coated.
- Spray a baking sheet with cooking spray. Transfer squash to baking sheet and roast about 10 minutes or until tender but crisp.
- Cook bacon until crisp and reserve 1/4 cup bacon fat.
- In a small saute pan, heat 1 1/2 teaspoons olive oil and butter over medium heat. Add onion and cook until caramelized. Reduce heat to low after 10 minutes and stir every 5 minutes or as needed. Reserve in a large bowl.
- In a large bowl, add kale, squash, bacon, onion, cranberries, almonds, and toss to combine.
- For dressing, combine vinegar, mustard, and brown sugar. Slowly drizzle in bacon fat and 1 1/2 teaspoons olive oil until emulsified. Pour dressing over salad and toss to combine. Serve immediately.

We hope everyone has an awesome thanksgiving with lots of food, family and friends! This is always a special share for us because we get to spoil you all for supporting our farm. Our CSA is the reason our farm has existed for 10 years now. We know it is the only way we can run a farm business that allows us to adhere to ecological practices we've committed to!
In fact, the CSA members drive us to do better. For the last couple of years people have been asking for plastic-free shares and we have been doing them for the people asking, but we took a leap of faith this season and went all plastic-free and it feels great! When we try this at the farmers market, our sales are almost cut in half because people are so accustomed to their produce being in plastic, so it is a huge deal that our CSA members embrace this change!
These kind of commitments between farmers and CSA members is what will truly drive the changes we need to enrich communities and the environment because big changes take cooperation. It takes everyone doing their part and encouraging each other to keep going! We're just so very grateful to all of you for supporting our farm! <3
