Not even Mystic Meg or Russell Grant could have predicted the rollercoaster year that we are all experiencing! With two months remaining, who knows what else we are to encounter, but one thing is for certain and that is the value and importance of family, friends and our PB community.
So, after a few summer months of trading safely and feeling like life was gradually getting back to normal, I can hardly believe I am writing this!
Following the Government’s announcement on Saturday that we would be heading into lockdown again on Thursday, we will once again be closing the STUDIO doors for Personal training until early December. Nobody wanted a second lockdown, but I think it was inevitable.
So what happens now?

Obviously, this is a really worrying time for all, with uncertainties over jobs, finances and what 2021 brings. But as the last lockdown showed us, communities can come together and if we put our minds to something, we can achieve a lot. Although we have been gifted this extra time, it is still the most precious asset at our disposal, once lost, it is non-retrievable. Maintaining a routine, takes the guesswork out of our day and allows us to wake up and ‘do’ instead of waking up and ‘plan’. It predetermines our schedule, allowing us to use our time efficiently. MOVE TO THE CHALLENGE!

Foot Health Clinic returns

Our Foot Health Clinic reopens on Wednesday 18th November. Already many of you have booked in and we expect Louise Reynolds to be very busy from the start! Treatments are available on Wednesdays 9am-5pm and alternate Thursdays commencing 18th November.

ZOOM classes will continue and we will be adding to the timetable another High Intensity Workout on Saturday mornings at 9.30am. See what's available.

Each class is 30 minutes long and, in each session, we work through the whole body, showing the joints what the joints should be doing on a regular basis in a safe controlled way!

Thai noodle soup
A relatively simple and cheap midweek supper as you can use whichever veg you have lying around, including mushrooms, green beans and asparagus. As long as you have the garlic, ginger onion mix plus the soya sauce, rice vinegar and lime juice, you can adapt this to what you have in the fridge. Adding a sliced lemongrass stick when frying the onions to add more of a Thai feel.

Serves 2-3
INGREDIENTS
200g glass noodles
2-3 tbsp sunflower oil
1 medium onion, diced
2 thumbs ginger, diced
4 sticks celery, roughly chopped
2 garlic cloves, diced or grated
1/2 courgette, thinly sliced
1 1/2 peppers, thinly sliced and chopped
650- 700ml veggie stock, hot
Large handful broccoli, chopped
Large handful chopped spinach
6 tbsp tamari soya sauce
2 tbsp rice /apple cider /white wine vinegar
Zest of a lime and the juice of half
A sprinkle of schichimi Japanese 7-spice seasoning (DID NOT USE THIS AS THE LADY IN MORRISONS HAD NEVER HEARD OF IT!)
Black pepper
2 tbsp sesame seeds
Method
Add the glass noodles to a bowl and cover with newly boiled water. Leave for about 4-5 minutes until soft. Drain and put to one side.
Set a large saucepan to a medium to high heat. Add the sunflower oil and add the diced onion, celery and ginger.
Fry for about 3 minutes or until it has softened. Add the garlic cloves and mix for a minute. Then add the chopped courgette and peppers and stir for another 3 minutes. Then pour over the hot vegetable stock and bring to the boil and then down to a simmer for about 5 minutes.
Add the broccoli and cook for 3 minutes before throwing in the chopped spinach and cook for another minute.
Remove from the heat and add the lime’s zest, juice, soya sauce, vinegar, black pepper and schichimi seasoning if using. I used scissors to cut the noodles a bit before adding to the pot.
Stir and double check the seasoning. Serve straight away with a sprinkle of sesame seeds.
This keeps well for about 3 days in the fridge.
