Stay positive!

“There is little difference in people, but that little difference makes a big difference. The little difference is attitude. The big difference is whether it is positive or negative."
W. Clement Stone

How we think and what we think has a huge impact on our life choices. Whether it is half full or half empty, impacts greatly on how we see our world. Considering the average human has 6,200 thoughts per day*, that is over 250 per hour, or almost 400 per hour if we exclude 8 hours sleep! In these difficult times with so many fears and uncertainties, it can be difficult to remain positive. If we are to believe the 2005 research on human thoughts per day the task becomes more arduous. This research found that on average that the participants thoughts, were 80% negative and 95% were the same repetitive thoughts as the day before!!

MOT your car but why not your body?

It is that painful time of year when my car needs a service and I hope that it does not hit my wallet too hard! A regular service and MOT are essential for our cars, even more so if you depend on it for your livelihood! I am pretty sure that when I look to get my next car that all important 'FSH' acronym will help with my choice as it signifies that the car has a full service history, which means it has been looked-after and more likely, a wise purchase.

Just as our cars are regularly serviced, we all have an annual check-up with a dentist to maintain our dental health, but what about your musculoskeletal health?  Find out how and why this should be done.

Thai style vegetable curry

This is the perfect midweek dish that is packed with vegetables and extremely comforting on a cold winter’s night! You can use this easy paste with whatever vegetables you have or swap for prawns or chicken if you wanted more protein.
Serves 2
Vegan, GF/DF

INGREDIENTS
300g broccoli, cut into small pieces and thinly slice the broccoli stalks
300g cauliflower, cut into small pieces
1 aubergine, cut into small cubes
100g button mushrooms, big ones halved
1/2 tsp garlic powder
6 tbsp sesame seed oil/sunflower oil
Pinch dried chilli flakes or chilli powder
2 tbsp soya sauce
X2 handfuls baby spinach
400ml coconut milk
Handful cashews, roughly chopped
Juice of 1 lime
400ml veg stock, hot
Sea salt and black pepper

Paste:
1/2 onion, banana shallot (80g)
4 garlic clove
1 large thumb ginger, 30g
1 lemongrass, the stem trimmed and sliced in half
3 mild chilli’s or Thai chilli’s (very spicy), 80g
1/2 tsp coriander powder
1/2 tsp cumin powder
Large bunch of coriander stalks (with the leaves saved for mixing into the curry)

Method
Preheat the oven to 190 degrees and line two baking trays with either a baking mat or grease-proof paper. Add the broccoli pieces, cauliflower and chopped aubergine to the trays keeping the veg in separate groups. Drizzle over 3 tablespoons sesame seed or sunflower oil and season with garlic powder, salt and pepper. Toss the veg so that they are evenly coated and place into the preheated oven. Cook for 20 minutes adding the mushrooms for the last 5 minutes. They will look golden and crispy but still with a little bite.
While the veg are cooking you can make the curry paste. Place all the paste ingredients into a blender and blend to a smooth-ish consistency. Set a large non-stick frying pan to a medium to high heat and add the remaining 3 tablespoons of sunflower oil.
GET THE REST OF THE METHOD.
