There are a few wine makers around the world that have reached a tier above praise like Patrick Piuze of Chablis, yet he is typically understated: "the only thing truly original in the world of wine is the underlying terroir and I have nothing else interesting to add".

All bottled under wax seal, they even look gorgeous. This also protects against prem-ox, essential as these wines age REALLY well.



Just when you think an appellation cannot surprise you, in walks Patrick Piuze. His wines are unmistakably Chablis with it's signature electrifying acidity, but he also manages a level of depth and complexity that led a (French) wine importer to recently remark to me that he considers Piuze' wines to be greater than Raveneau or Dauvissat - the region's two standard bearers.
