We hope you'll enjoy feasting on some King Salmon this week - it's not something we can offer too often but we are happier with the product we have this week than we've been the last couple times.

Since we have all this beautiful salmon, that means that we also have an abundance of salmon collars and bellies available in the store as well.
As a reminder, this salmon has been previously-frozen. It is thawed in order to fillet it but the texture is more delicate once it's been frozen. It is also leaner than our Monterey Bay Kings which, in addition to the freezing, can make it tend to dry out a little easier. We recommend a light water rinse and pat dry before preparing as well as cooking it in a way that helps retain moisture such as with an oil-based marinade or poached.
