Bodegas Ordonez 'Triton' 

Triton is a powerful, robust wine, derived from Tinta de Toro, one of the oldest Tempranillo clones in Spain. It is full bodied, with deep fruit notes, and has ample minerality with smooth tannin. You will find subtle notes of black currant, chocolate, licorice, and florals like crushed violets. Would pair really well with grilled pork.
Jauma 'Audrey's Fairygarten'

A light, carbonic style of Shiraz from natural wine stalwart Jauma in the Adelaide Hills of Australia. The wine has no additives, no sulfites are used during the fermentation, no added yeasts, and no filtering or fining is undertaken. As usual, Jauma is as natural as natural wine gets. The wine itself offers a fruity and vibrant effervescence with notes of raspberry, cranberry, strawberry, and rose on the palate.
Rowan's Creek Kentucky Straight Bourbon Whiskey

Another small batch offering from bourbon mainstay Willett; Rowan's Creek is aptly named after the creek which runs through Willett Distillery. The bourbon itself is complex and comforting, offering subtle hints of vanilla and caramel that intertwine behind layers of herbal and floral notes. On the finish you will find a lingering spiciness among the oak.
My Sherry Amour...

It's taken some time to cultivate, but we've recently updated our Sherry selection to offer a concise yet versatile selection. Sherry, very simply put, is fortified wine. While it ferments it sits on the 'lees' (yeast) for an extended period of time which creates a slightly higher alcohol content and a smoother texture. Sherry can be enjoyed in a wide variety of manners, but I have found the best ways are with appetizers, desert, or as a little treat on it's own. The varieties of Sherry vary from semi-dry and mineral to sweet and creamy. At Proof we currently have four Sherries;

Tio Pepe Fino: A standard, a classic, a workhorse sherry. This will pair nicely with fried appetizers and shellfish and will work nicely if a savory food recipe calls for Sherry.

Gonzales Byass Alfonso Oloroso Seco Palomino: This I would decribe as being closer to a desert wine, aged longer so it has more of a robust caramel note to it, though I would note its sugar content as being semi-dry. Pairs nicely with charcuterie, cheese, and creamy deserts.

Valdespino Contrabandista Amontillado: This is another one that would pair nicely with desert, a bit sweeter and smoother than the Oloroso, though at the expense of some complexity. Pairs very well with pastry deserts and baked fruits.

Valdespino Manzanilla 'Deliciosa' En Rama: This one is special to me, this was my first and still my favorite sherry. It's smooth, not too sweet, and has a dry, somewhat starchy finish that essentially makes you crave cheese. It's a Manzanilla sherry which is much closer to a Fino and thus this pairs better with savory appetizers than it does desert. Additionally it is 'en rama' which simply means it goes from the barrel into the bottle, no filtration, no post processing. It is my first and often only pairing choice if I'm having a cheese and charcuterie board.
