Help us with our studies..

Over the course of the summer, I was able to work with a business coach from Cirencester Growth Hub. With our 20th anniversary just around the corner, it provided us with a chance to reflect on our successes, mistakes and lessons learnt from the past 20 years and plan for the next 20 years of Personal Best.
One outcome from this collaboration is the opportunity for 5 MBA students from Gloucestershire University to highlight an aspect of our business. Read More...

20 year anniversary!

As we look to promote our business and celebrate our 20th Anniversary, in the New Year we will also be asking for volunteers to create short video testimonials like this.

Essential back care

As we have discovered, there are numerous reasons to get fit, but whatever your motivation, you would expect to feel better after the gym! So why does your back hurt after exercise?  According to Stuart McGill, Ph.D., professor of spine biomechanics at the University of Waterloo in Ontario and the author of Ultimate Back Fitness and Performance, exercise that you assume will keep you healthy, may be to blame for your pain!  Read more...

December Recipe

ROASTED CHICKEN WITH SMOKEY BRAISED KALE

This delicious recipe is adapted from Gjelina ‘Cooking from Venice Beach’ and although I was
initially put off by the brining of the chicken, it’s certainly worth the effort. The braised kale
makes a great accompaniment to this dish but could easily be eaten on its own!

INGREDIENTS
BRINE
240ml warm water
240ml ice water
50g salt
55g sugar
1 lemon cut into rounds
4 thyme sprigs
1 bay leaf
1 dried guajillo chilli – or chilli of preference
4 chicken breasts – skin on

BRAISED KALE
3 tbsp extra-virgin olive oil
1 Spanish onions, peeled and diced
4 cloves garlic, peeled and thinly sliced
1Tbsp tomato paste
1/2 tsp smoked paprika (pimentón)
Sea salt and freshly ground black pepper, to taste
480ml vegetable or chicken stock
2 tbsp red wine vinegar
3 bunches washed kale (I used spring greens), thick stems discarded or cut into thin strips, leaves cut into thick strips.
Get the method...

Give the gift of health this Christmas

2020 will be a year that we never forget. But it will also be seen as year when many of us stepped back and reviewed our life and our habits. There is no getting away from the fact that inactivity is a major health burden. The good news is, it is never too late to start exercising and benefitting from all the health benefits that physical activity brings.
