Eccles cakes happened on LittleSugarSnaps this week! I used to make them all the time as a teenager and then somehow they slipped from my memory and stayed absent for the last 3 decades.
But they are back! Thank goodness. Mine come with a little added sweet cinnamon and nutmeg spices, making them perfect for cold January days.
For those who have never hard of Eccles cakes - they are a very British treat, originating from the town of Eccles (you don't say!) in Lancashire. Despite the name, they are pastries not cakes, with a generous fruity filling and apparently they pair well with a chunk of creamy Lancashire cheese. I've never eaten them this way - just freshly baked. and still slightly warm. Sigh....
