In the spirit of positivity: Happy New Year! I know much of the world is off to a shaky start, but I'm putting my best foot forward here. Hoping you all enjoyed (as much as you could) a relaxing, if quiet, Christmas break too!

I'm starting off 2021 with a wonderful pasta bake recipe. It's full-on comfort food, ideal for the family and it's veggie friendly. (there are also vegan and gluten-free details included in the details). 

And, to help you out, should you also be feeling the need for some sweet comfort food hugs, I'm including a link to my stove-top rice pudding, which got a make-over just before Christmas. It's now fully loaded with step-by-step instructions and tips for success.

 


This pasta al forno recipe combines penne rigate pasta, a hearty aubergine ragu and plenty of mozzarella cheese. This incredibly tasty aubergine pasta bake is fantastic meat-free comfort food that can be made in advance.
