This week's fresh long-line caught Swordfish was unloaded this morning in San Pedro, CA and is on it's way to us now.

We should have it about 9am so will be in a mad dash to get it filleted, portioned, rinsed, packed and delivered to you! It's a marathon but our whole team thrives on the excited hustle of Tuesdays. (This is why we appreciate having to make as few custom requests happen as possible.😊🙏)

We're slowly procuring a lot of great products to compliment seafood  - not for sales but simply to inspire more delicious meals and simplify your lives. 

Swordfish is a meaty, firm fish with a great shelf life - it could keep 4-5 days if you like. It holds up great as kababs, on the grill, and seared. We hope you enjoy it!

Swordfish Pasta with Truff

Ingredients

Instructions

  1. Begin to cook pasta until it is aldente (reserve pasta water for a later step)
  2. Place a large sauté pan (4 quarts or more) on high heat, add 3 tablespoons of the oil and when it’s mighty hot (a piece of fish should sizzle) add the swordfish, spreading the pieces around in the pan in a single layer. Sear for about 30 seconds until just starting to brown. Use a spatula to turn the fish, and cook another minute or so. Season with salt and pepper.
  3. Once swordfish is cooked, sir in Truff Pasta Sauce and cooked Pasta. If the sauce is too thick, stir in a tablespoon of reserved pasta water until it reaches your perfect sauce consistency. Season with salt and pepper to taste.
  4. Plate with Basil and Parmesan Cheese.

We try not to feature previously-frozen products to you unless we are really in a bind of availability but we just didn't have enough crab or other local fish (altho there is small quantities up for grabs in the online store) to showcase as our 2nd selection. These shrimp are our favorite - wild, saltwater prawns U-16 in size (approx 16 to a lb) and caught in the Texas Gulf. They come thawed, head off, shell on.

We've got extra in the store for anyone who would like to add them or increase their order.
