The Department of Food Science and Technology and The Food Processing Center welcome all of our new and returning students, faculty, and staff to the Spring 2021 semester. We still have big challenges related to the COVID-19 pandemic ahead of us. However, if we remain vigilant in practicing our safety measures, we're ready to make this another successful year!
Most of the functions of the Department and the Center continue while following University and local health department directed health measures. Dr. Amanda Ramer-Tait, Dr. Jeff Price, Kristin Beede, Jordan Goebel, Tamara May, Jing Shao, Robert Schmaltz, Stacey Wiles of the Gnotobiotic Mouse Facility were featured on IANR News. The article discusses the germ-free mouse facility, the research done there, and how it functions. The Department of Food Science and Technology at the University of Nebraska-Lincoln is the only food science program that has such a facility. Nebraska’s Drs. Christopher Gustafson and Devin Rose, and recent master’s graduate Kristina Arslain conducted an experiment on Point-of-decision prompts, messages that encourage shoppers to consider health when making a purchase. They have shown promise for convincing people to buy nutritious foods. The research was featured in Nebraska Today's Pocket Science series. The Midwest Messenger featured the work of Dr. Changmou Xu and graduate students Yutong Liu and Rui Huang in developing plant-based yogurt. Xu’s bean yogurt experiments began this year, after receiving one of 12 total grants awarded to UNL by the USDA’s Specialty Crop Block Grant Program, designed to increase demand for specialty crops. Within year one of the three-year project, he hopes to have an edible yogurt product completed. The article can be read at https://go.unl.edu/49fe.
Emergency Preparedness

To be ready for an emergency your department/facility/area should have an Emergency Action Plan to facilitate and organize employer and employee actions during workplace emergencies.  Well-developed emergency plans and proper employee training, such that employees understand their roles and responsibilities within the plan, will result in fewer and less severe employee injuries and less collateral damage to ongoing research or facilities during emergencies.
 
All workers should be familiar with the emergency action plan, including how they will be notified of an emergency, at least two safe routes of escape from the building, and where they can shelter-in-place, if needed. In an emergency people tend to freeze, so they need to know what to do without having to think about it—that means training. If workers have additional roles to play in an emergency, such as shutting down equipment or assisting disabled co-workers, they must be trained in those duties as well. In addition to regular review/ /retraining, make sure that all new workers are trained on the emergency action plan.

Web Development/Social Media Coordinator (Student Worker)

Nebraska Food for Health Center

The Nebraska Food for Health Center is looking to hire a Web Development/Social Media Coordinator for their upcoming virtual Agriculture & Health Summit occurring in October 2021. The coordinator will help create, manage, and track sponsorship levels and their social media ads during and leading up to the conference. This role will connect with other communications people at the different centers and organizations in order to promote the event.

The ideal candidate will be willing to learn a virtual platform system called Brella, know or be willing to learn the UNL content management system (CMS) and be familiar with HTML, graphic design, and posting to social media platforms such as Twitter.

Some work week daytime availability will be required.

10-15 hours per week. Pay is $11/hr.

Assistant Professor

Michigan State University

The successful candidate is expected to attract externally funded competitive grants to support their sensory science program and will plan and execute the appropriate sensory tests for the food industry, provide analysis and written reports, and schedule and supervise sensory laboratory operations. Assistant Professor

Purdue University

Tenure-track Assistant Professor (9-month) position at Purdue University with research and teaching responsibilities in an area related to biomanufacturing engineering of food, pharmaceutical, and biological-based products. The successful candidate will join the faculty in the Department of Agricultural and Biological Engineering on the main campus of Purdue University in West Lafayette, Indiana. The successful candidate is expected to develop a nationally recognized research program in the design of both upstream and downstream processing systems for the production of food, pharmaceutical, and/or biological products. The research may address biological product and process design; modeling, optimization, control, or simulation of batch and continuous microbial processes; or plant, mammalian and/or cell-based/free process systems using laboratory and computer-based methodologies.

Supervisory Research Plant Pathologist / Research Geneticist / Research Chemist Position

Schafer Agricultural Research Center in Fargo, ND is seeking a full-time, permanent Supervisory Research Plant Pathologist, Research Geneticist, or Research Chemist to serve in a leadership role as a Research Leader for the Unit, responsible for all fiscal, personnel, facilities, and programmatic aspects of the Unit. The primary mission of the Unit is to improve quality and disease resistance of small grains (barley, spring wheat, durum wheat, and oats) through research on genetics, genomics, pathology, and end-use quality.
