Food Safety, Worker Safety, and COVID-19

Dr. Ashton Merck, a DKU Global Fellow and historian, writes in Medium (April 2020) about the connections between food safety, worker safety, and COVID-19. Merck argues that as long as food safety is defined in terms of “government inspection,” any risk to in-plant inspectors also poses a comparable risk to the production of safe food. Read more
