Fresh Steelhead

ABOUT THE FISHERY

"West Coast Fishculture was founded in 1973 by Ward Griffioen as a small family business which quickly grew into a substantial farming operation. Ward helped pioneer the opportunity for salmon farming in the Pacific Northwest and was always a visionary in the quest to do fish farming the right way.  We continue to hold true to Ward’s founding principle of producing high quality fish in a socially and environmentally responsible way and now lead the world in best practices for farming fish sustainably."

WEST COAST FISH CULTURE

This week, members will be receiving very sustainable fresh Steelhead from the pristine Lois Lake.

While we know this isn't local, it's a beautiful sustainable aquaculture product that we turn to in the winter sometimes and not to worry -

It's recognized and certified by the Vancouver Aquarium’s OceanWise program. Lois Lake Steelhead is an OceanWise recommended product.

This beautiful Steelhead cooks up just like fresh Salmon as it's similar in oil content. Feel free to substitute this Steelhead in any Salmon recipe you love. The last time we featured this product, as we were all anxiously awaiting Crab season, we got a record number of positive feedback so we hope you all love it just the same this week.

It sort of feels like the calm between two storms right now for us - the chaos of a delayed Dungeness Crab season has died down a bit while excitement for the fresh local King Salmon season is revving up. More and more local fish is showing up across the docks like some beautiful Halibut we got in today (available in our CSF web store) as well as a small bit of Rockfish for our 2 Meal per Week Subscribers (also some in the store if you'd like to add it.)

Thanks Club Members!

PS - we have an exciting new house-made dish in the store this week, a Peruvian Ceviche Mixto - check it out in the store items below!
