I hope you're all safe and well - surviving the most recent lockdown and making the most of the sunshine. I've been busy delivering online courses as well as testing new recipes which I'm so excited to share with you.

I've included one of my most popular recipes on the course and thought it was appropriate to share it on St David's Day! This recipe can be found in my book www.frommountaintosea.co.uk which is available online. I hope you enjoy....
These welsh cakes are slightly different to the traditional sweet version… but you cook them in exactly the same way and they are delicious as a savoury treat/canape with drinks (especially if served warm, straight from the bakestone). You’ll need to use the olives in brine as they won’t lose their colour in the mixture.
Welsh cakes
175 g self-raising flour
1 teasp baking powder
80 g welsh salted butter
50 g grated strong cheddar
50 g finely chopped black olives in brine
50 g chopped pancetta or lardons (optional)
1 egg
A little milk
1 teasp dried thyme
½ teasp cayenne
½ teasp cumin
½ teasp Malden salt
Heat a maen (griddle/bakestone) very slowly and lightly butter.
Mix all the dry ingredients with the butter until it resembles breadcrumbs, add the rest of the dry ingredients followed by the egg and a little milk - mix until it becomes a ball.
Roll out to 5 mm thick and cut out into shapes or rounds.
Arrange the Welsh cakes on the maen and cook slowly for about 15-20 minutes turning regularly until golden and cooked through.
