April showers brings May flowers....
We all know we could use some more rain around here....,right?
For SI Bidwell Rancho, April will be a busy month. We are trying another new fundraiser!
On April 21st we will cook you Dinner! We are holding our first "Drive Thru" Dinner Fundraiser. On the menu are pulled pork sandwiches, pasta salad, coleslaw and a slice of Bundt cake.
Many thanks to the membership for trying several new fundraisers this year!
Our nominating committee has started to reach out to membership for possible interest on joining the board for the 2021/2022 term. This is a great way to become more involved with Soroptimist! Plus you will learn a lot and have the added bonus of strengthening friendships and making new ones.
I am looking forward to the 45th Sierra Nevada Region conference. This year the conference will be on Zoom again, but a large portion will be "live". I want to encourage you to tune in and see what the region leaders have prepared for us. More information in the April 1st SNR E-Blast.

Awards Celebration
On March 23, 2021 SI Bidwell Rancho celebrated our Live your Dream and Scholarship awardees via Zoom! We also celebrated Maxine Guynn and Lisa Fitzgerald for their 25 year Soroptimist anniversary!

SI Bidwelll Rancho and SI Chico have started with the annual Dream it, Be it at Fairview High School, here in Chico. Because of Covid restrictions we have decided to do the 7 week program all via Zoom. We are splitting the 7 weeks between our two clubs. Both clubs have invited interesting and engaging speakers.
We like to encourage all club members to tune in to one session or all sessions. Zoom links are on our club calendar or above under "Upcoming Events" for each week.
Class starts 8:10am on Thursdays, beginning 03/25 for SI Bidwell Rancho
and 8:10am on Wednesdays for SI Chico. We are alternating weeks.
The morning session will be recorded and shown to a second group in the afternoon.

Chicken Piccata with Lemon Sauce
by Sherry Holbrook
Ingredients
· 8 boneless skinless chicken breast halves (4 ounces each)
· 1/2 cup egg substitute
· 2 tablespoons plus 1/4 cup dry white wine or chicken broth, divided
· 5 tablespoons lemon juice, divided
· 3 garlic cloves, minced
· 1/8 teaspoon hot pepper sauce
· 1/2 cup all-purpose flour
· 1/2 cup grated Parmesan cheese
· 1/4 cup minced fresh parsley
· 1/2 teaspoon salt
· 3 teaspoons olive oil, divided
· 2 tablespoons butter
Directions
· Flatten chicken to 1/4-in. thickness. In a shallow dish, combine the egg substitute, 2 tablespoons wine, 2 tablespoons lemon juice, garlic and hot pepper sauce. In another shallow dish, combine the flour, Parmesan cheese, parsley and salt. Coat chicken with flour mixture, dip in egg substitute mixture, then coat again with flour mixture.
· In a large nonstick skillet, brown four chicken breast halves in 1-1/2 teaspoons oil for 3-5 minutes on each side or until juices run clear. Remove and keep warm. Drain drippings. Repeat with remaining chicken and oil. Remove and keep warm.
· In the same pan, melt butter. Add the remaining wine and lemon juice. Bring to a boil. Boil, uncovered, until sauce is reduced by a fourth. Drizzle over chicken.

Fresh Shrimp Salad, Three Ways

This is the best summer salad for a light lunch or dinner with your garden tomatoes and herbs!
No measurement is necessary, go by what you have on hand and your own taste!
A fruity olive oil is best and I prefer lemon to lime, which you could use for any one. Or balsamic: choose the acid of your liking or just what you have on hand!
You can use bay shrimp or whole shrimp…I prefer the larger shrimp. Cooked, of course! Eat what you love!

Shrimp
Tomato, diced
Avocado, diced
Cucumber, sliced
Cheese, Cotija grated or Queso Fresco, crumbled
Cilantro, chopped
Jalapeno, chopped
Green onions, sliced
Lime juice or lemon juice
Olive oil
Salt
Italian
Shrimp
Tomato, diced
Red onion, chopped*
Fresh basil, chopped
Garlic, minced
Pine nuts, chopped
(Or pesto in place of previous 3 ingredients)
Mozzarella or Parmesan, grated
Pepperoncini, diced*
Red wine vinegar
Olive oil
Salt
*I have also used fresh chopped fennel in place of onion and green ripe olives or green pickled olives in place of pepperoncini.

Tomato, diced
Cucumber, chopped
Red onion, chopped
Red or yellow bell pepper, chopped
Kalamata olives, sliced
Fresh oregano or mint, or both, chopped
Feta cheese, crumbled
Olive oil
Salt
*I have also made a tzatziki dressing for this with plain yoghurt, garlic, lemon and herbs
