April showers brings May flowers....
We all know we could use some more rain around here....,right?

For SI Bidwell Rancho, April will be a busy month. We are trying another new fundraiser!
On April 21st we will cook you Dinner! We are holding our first "Drive Thru" Dinner Fundraiser. On the menu are pulled pork sandwiches, pasta salad, coleslaw and a slice of Bundt cake.

Many thanks to the membership for trying several new fundraisers this year!

Our nominating committee has started to reach out to membership for possible interest on joining the board for the 2021/2022 term.  This is a great way to become more involved with Soroptimist! Plus you will learn a lot and have the added bonus of strengthening friendships and making new ones.

I am looking forward to the 45th Sierra Nevada Region conference. This year the conference will be on Zoom again, but a large portion will be "live". I want to encourage you to tune in and see what the region leaders have prepared for us. More information in the April 1st SNR E-Blast.

Wishing you a very happy Easter!

In appreciation, Babette

Empower Women and Girls

To celebrate 100 years of SIA and kick off our next Big Goal, we’re encouraging each club to increase the number of women and girls they reach through the Dream Programs.

You can do this by:

  • Supporting more women in your community on their path to economic empowerment

  • Reaching more girls with career exploration, role models, and confidence-building activities

The goal of increasing the number of women and girls that your club serves through the Dream Programs can seem challenging, but we believe you can achieve it! The 100th anniversary is an exciting opportunity to increase public awareness about your club and increasing your club’s impact tells a wonderful story as we move into our brilliant future. Help kick off our second century and 2021-2031 Big Goal of investing in the dreams of half a million women and girls through access to education!

Chicken Piccata with Lemon Sauce

by Sherry Holbrook

Ingredients

·         8 boneless skinless chicken breast halves (4 ounces each)

·         1/2 cup egg substitute

·         2 tablespoons plus 1/4 cup dry white wine or chicken broth, divided

·         5 tablespoons lemon juice, divided

·         3 garlic cloves, minced

·         1/8 teaspoon hot pepper sauce

·         1/2 cup all-purpose flour

·         1/2 cup grated Parmesan cheese

·         1/4 cup minced fresh parsley

·         1/2 teaspoon salt

·         3 teaspoons olive oil, divided

·         2 tablespoons butter

Directions

·         Flatten chicken to 1/4-in. thickness. In a shallow dish, combine the egg substitute, 2 tablespoons wine, 2 tablespoons lemon juice, garlic and hot pepper sauce. In another shallow dish, combine the flour, Parmesan cheese, parsley and salt. Coat chicken with flour mixture, dip in egg substitute mixture, then coat again with flour mixture.

·         In a large nonstick skillet, brown four chicken breast halves in 1-1/2 teaspoons oil for 3-5 minutes on each side or until juices run clear. Remove and keep warm. Drain drippings. Repeat with remaining chicken and oil. Remove and keep warm.

·         In the same pan, melt butter. Add the remaining wine and lemon juice. Bring to a boil. Boil, uncovered, until sauce is reduced by a fourth. Drizzle over chicken.

Fresh Shrimp Salad, Three Ways

by Sally Mendez

This is the best summer salad for a light lunch or dinner with your garden tomatoes and herbs!
No measurement is necessary, go by what you have on hand and your own taste!
A fruity olive oil is best and I prefer lemon to lime, which you could use for any one.  Or balsamic: choose the acid of your liking or just what you have on hand!
You can use bay shrimp or whole shrimp…I prefer the larger shrimp.  Cooked, of course!  Eat what you love!
