We got a freeze not forecasted, resulting in one more day of collecting from Sap Run #2, so it ended up being a 7-day run, which is pretty impressive, and we collected on four days, yielding a total of 2,600 gallons from that sap run alone. We have collected 4,485 gallons this year.

15 gallon Whiskey Barrel fill underway

I just completed filling the 15 gallon Whiskey Barrel. The smell that comes off as I pour in the hot syrup is soooo good! Okay...Looking at the forecast I see Sap Run #3 starting on Saturday, our first day of collection will be the following Monday; it looks like another good run. It's a little too early yet to nail this schedule down. That's a good thing, because I've got a couple of more days of Evaporating in my future.

It seems like we are more efficient in the collecting this year...I'm going to have to look back at my 2020 records and make a comparison. If so, it's a good thing; Andrew, Kenton and Dora have done yeoman's work.
