Hope you all are doing well. This week we are pleased to announce that we are teaming up with the West Seattle Food Bank for a good old fashioned Can-Drive! Starting today, we will be accepting donations of any canned food items (check the expiration dates, please!) to see if together we all can make a difference for underprivileged families in our community. The Can-Drive will run for the next 10 days through Sunday, March 21st. Bring by any canned food items you have for donation during store hours and receive the "nod of approval" and that warm feeling that accompanies a good deed. Together we can!
Speaking of good deeds, Orval Day 2021 is fast approaching and I wanted to take this opportunity to remind everyone that the good folks at Merchant Du Vin donate a portion of the proceeds from each bottle of Orval sold on Saturday, March 20th to a local charity. This years partner is Northwest Harvest. Orval is no stranger to charity, in fact it is deeply rooted in it's history. The legend goes that the widow of the Count of Chiny, Mathilde de Toscane (1046 - 1115) was sitting beside the local spring when she accidentally dropped her wedding ring into the waters. Praying that it would be recovered she was filled with awe when a trout appeared with her cherished ring in its mouth. She was so grateful to have the ring returned that she donated the funds for the building of an abbey on a nearby plot of land. The beer brewed in that Abbey became Orval. Come celebrate with us Saturday, March 20th and receive a branded Orval Chalice (while supplies last) as a special thank you from us. Bonus points for anyone who brings a can or two for donation!
Finally, as many of you no doubt have heard by now, all Washington counties will be moving to Phase 3 of reopening on Monday, March 22nd. As we near the anniversary of the Shutdown in Washington, I just wanted to take a moment to thank all of you out there who have been beside us through this challenging time. We deeply appreciate the patience and understanding you've all shown as we navigated the difficulties of operating a business throughout the Pandemic. As for what changes Phase 3 will make to our day-to-day operations, that still remains unclear. But it is a step in the right direction; one that could not have been achieved without the cooperation of our community. From the bottom of our hearts, thank you for your continued support.

Weekly Beer History + Fun Facts
Rauchbier
A beer brewed with smoked malt of German origin. Although a Rauchbier can be made in any style, it is most commonly a medium-strength lager. Rauchbier's (German for "smoke beer") origin story is a bit murky. As the legend goes, Rauchbier owes it's creation to a cloister (monastery) that caught on fire. While much of the cloister was destroyed, part of the brewhouse (and a good portion of malt) had been spared. The malt had been exposed to the smoke from the nearby fire, however, and imbued the beers it became with a special smoky flavor. And thus, Rauchbier was born! A fun story to be sure; but likely just a fantastical tale. In truth, a bit of smokiness would have been present for most kilned malts prior to the invention of newer malting and kilning technologies in the early 19th Century. Today this smoky effect is achieved by producing smoked malts in a separate kiln where smoke from cured beechwood (or in rarer instances oak) is used to dry the malt.
One interesting quirk of Rauchbier production is that a significant portion of the smokiness will be absorbed by the yeast during fermentation. If this "smoked" yeast is subsequently used to ferment a non-smoked beer, it too may show a hint of smokiness. Schlenkerla uses this to great effect in its Helles lager; a brew made without any additions of smoked malt, but rather with repitched Rauchbier yeast. More typically, Rauchbier yeast is repitched into consecutive Rauchbier batches to achieve a consistent smokiness.
