One meal per week members: Fresh Washington Mussels

Well, it's one of those weird times around the Monterey Bay here that not much is coming in besides Crab still, in small quantities. It's sort of that calm between two storms as we wind down Dungeness season and await the local King Salmon season. During these times we have to get a little more creative with our selections but we got our hands on a beautiful shipment of fresh Washington Mussels.

We will be INCREASING the share sizes to approx .75 lb for a Single Share, 1.5 lbs for a Couple Share, and 3 lbs for a Family Share. 

We've got some super tasty recipes linked below but Mussels are also just wonderful simply steamed in a little butter, garlic, and white wine. 

We recommend a light freshwater rinse before cooking, either right in the net bag or in a colander. They should last several days uncooked in the fridge and will do best stored well ventilated - like in a bowl on the refrigerator shelf.

We hope this blustery chilly weather will make a nice piping hot bowl of Mussels be an enjoyable comfort meal for you all! 

As a reminder, if you are on the 'no mussel' or "no shellfish' list, we'll send a substitute.

Two meal per week members: frozen at sea Alaskan sockeye

2 Meal per Week Members will also receive previously-frozen Wild Alaskan Sockeye Salmon. As you can see from the photo, Sockeye is much leaner than our local King  - less fat marbling and much redder in color due to the amount of krill they eat (as opposed to fatty baitfish such as sardines, anchovies, etc.)

Many people absolutely love Sockeye for its mild flavor and deep red color. 

When cooking, it may tend to get a little drier so please keep that in mind when choosing a recipe. We've selected some that called to us below but a simple poach will also do well (liquid of your choice - wine, juice, broth) or bake/broil in an oil-based marinade to help retain moisture.

Did You Know

Sockeye salmon are social fish and swim in runs together while making their way to mating grounds. They are also known to form social hierarchies during reproduction whereby the largest male fish are usually the most dominant. Sockeye salmon have great senses. Their strong sense of smell helps guide them back to their home stream.
