It feels a bit strange again this year saying Happy Easter, floods and COVID and their consequences are still big issues for many of us. Let's make the best of a challenging time. Easter is a great time to choose gratitude, notice what we do have in our lives and have real gratitude for that. Following the last year or so; many of us will be much more grateful for things we previously took for granted. There is a great book on this topic called Thank and Grow Rich, Fiona highly recommends it. There is also an audio version on audible.com.au.

Many people are struggling at the moment financially, emotionally and much more. This is time to have compassion for ourselves and others, it is OK not to feel OK at the moment. Everyone is living with a certain level of uncertainty and that feels uncomfortable, that is OK. If you need emotional support or physical support (including immune support), let us know. It is fun to enjoy some sugar at Easter (we will too), however be aware however that sugar does drop immune system function; so enjoy some chocolate or hot cross buns and continue to be sensible and practice self-care.

Tips to help you enjoy Easter:
 
  1. Begin with Gratitude: Rather than being disappointed about what you can't do this year, focus on what you CAN do.
  2. Opt for antioxidant rich dark chocolate: 70-85% dark chocolate is A LOT lower in sugar than regular chocolate and because it is more bitter you tend to not eat as much. 
  3. Treat yourself in other ways: If you want to limit chocolate, treat yourself to a non edible gift such as an audio book or a hot bath with epsom salts, listen to some great music or some great podcasts.
  4. Eat mindfully: Enjoy your treats, eat them mindfully and then move on, without attaching a story to it (shame or guilt).
  5. Keep moving: enjoy a relaxing walk, it will help you use up the extra energy you have from the chocolates and help control your blood sugar levels and maintain a healthy mood (and health in general).
  6. Make your own Easter treats: such as some protein balls, an Easter smoothie or some homemade chocolates see recipes below for inspiration. Fruit platters are always yummy too! We also love to melt dark chocolate and dip strawberries, then put the strawberries in the fridge for a yummy snack!
  7. Make Fiona's fave Easter treats: Roast your fave nuts (under the grill is enough, until they smell nice and don't let them burn)! Melt dark Lindt chocolate (78% or higher in a saucepan, it doesn't take long be careful not to burn the chocolate). Use patty cakes or an ice cube tray or use one big tray and break it up once its cold if you prefer. Mix the nuts and chocolate, pour into serving sizes and pop in the fridge or freezer. You can also add things like coconut pieces or dried fruit. This is a Fiona recipe so it is not exact.  Enjoy!

Raw Cacao Easter Chocolates 

Ingredients (t = teaspoon  T = Tablespoon)
  • 3T coconut oil
  • 3T almond spread
  • 4T cacao
  • 1t vanilla extract
  • 1t honey
Method 
  1. Melt the coconut oil in a medium bowl
  2. Add the remainder of the ingredients to the coconut oil and mix until combined
  3. Pour the mixture into shaped moulds or straight onto a flat tray covered with baking paper
  4. Place the chocolates either in the fridge or in the freezer for 20 minutes or until set
