Texas' first Blue Wave Beach!

Texas Beach Watch - Texas Beach Watch is a program funded by the U.S. Environmental Protection Agency (EPA) and administered by the Texas General Land Office to monitor water quality at Texas' recreational beaches. When bacteria levels in the water exceed the acceptable standards established by the EPA, the GLO works with local governments to issue advisories warning the public not to swim in affected waters.

Clean Beaches  - The Clean Beaches Coalition (CBC) is a network of coastal organizations and individuals committed to promoting clean, healthy, and well-managed beaches around the world. 

The Rockport Beach waters (Little Bay, Saltwater Pool, North and South Rockport Beach) are tested twice a week for bacteria and the results are posted on the TexasBeachWatch.com website.  They are also available at our entry booth and office.  In the event of a high reading, there are signs in those locations to indicate the same.

It's easy to participate in Rockport-Fulton Restaurant Weeks - Taste of Rockport-Fulton!
● No tickets or passes are required!
● Food lovers simply dine in or out at as many participating restaurants as they wish
● Pick up a Bingo Card at participating restaurants for a chance to win a Grand Prize
● and...it’s all for a good cause!

A unique twist is that the Rockport-Fulton Chamber of Commerce has teamed up with the Rockport Rotary Club to present a donation option while dining.
While dining at participating restaurants you can contribute to the Rotary Foundation Scholarship Fund to help a student get to college or a trade school.
During four weeks in April, at each table of participating restaurants, you will find a table tent card with a QR code on it, scan the code to make a donation to the Scholarship Fund!
These donations will go to the Rockport Rotary Foundation and specifically to fund local scholarships to deserving students.
In its 30-plus years of giving the Rotary Club has awarded more than $300,000 in student scholarships.
We invite you to experience the fun while supporting a good cause.
It's important that we support our local restaurants during this pandemic and so important that we support our students as well.
With Restaurant Weeks, you are able to support both!

Visitors will get to shop in a leisurely fashion, visit the artist’s booths, and witness a select number of artist demonstrations to learn about a variety of materials, art mediums, and techniques.

“The event is an expanded version of our traditional Studio Tour that celebrates local artists, hosted each spring since 2018,” said Luis Purón, executive director for RCA. “Although we love the intimate nature of guests being able to visit with artists in their personal studios, we have found it necessary to set it up differently to provide more safety precautions for guests, participants, and volunteers. We think this is a great format that puts safety first without sacrificing artistic quality while also being able to handle larger groups than would be feasible in a small art studio.”

Throughout the weekend, guests may stroll through the spacious Fulton Convention Center in social distancing style while viewing and purchasing new work for their own private collections. Works will be available for collection at a variety of price points. Attendees will also enjoy viewing artist demonstrations in various mediums throughout the two-day event.

A great place to buy locally grown produce as well as jams, jellies, & pickled produce. There will often be fresh-baked bread, local honey, hen fruit, and freshly made goat soap. Buy fresh produce and cottage canned products, bread, and more at 105 S. Austin St. in the Oh My! Thank you, Volunteers and Quirky Birds Coffee for helping with “March Mulch Madness” at Aransas Pathways Gardens. We invite you to join us for the next Earth Day Project Saturday, April 24, 2021, from 8 am to 10 am at Connie Hagar Cottage Sanctuary at 1401 S. Church St.

In celebration of Earth Day, we will be planting native plants in the mulched pathways and garden areas. 
Bring your gardening gloves, water, masks, and favorite gardening tool. What better way to give back to your community while being outdoors and celebrating Earth Day!

Cheese Manicotti

 

Ingredients

  • 1 carton (15 ounces) reduced-fat ricotta cheese
  • 1 small onion, finely chopped
  • 1 large egg, lightly beaten
  • 2 tablespoons minced fresh parsley
  • 1/2 teaspoon pepper
  • 1/4 teaspoon salt
  • 1 cup shredded part-skim mozzarella cheese, divided
  • 1 cup grated Parmesan cheese, divided
  • 4 cups marinara sauce
  • 1/2 cup water
  • 1 package (8 ounces) manicotti shells
  • Additional parsley, optional

Directions

  • Preheat oven to 350°. In a small bowl, mix the first 6 ingredients; stir in 1/2 cup mozzarella cheese and 1/2 cup Parmesan cheese. In another bowl, mix marinara sauce and water; spread 3/4 cup sauce onto the bottom of a 13x9-in. baking dish coated with cooking spray. Fill uncooked manicotti shells with ricotta mixture; arrange over sauce. Top with remaining sauce.
     
  • Bake, covered, 50 minutes or until pasta is tender. Sprinkle with remaining 1/2 cup mozzarella cheese and 1/2 cup Parmesan cheese. Bake, uncovered, 10-15 minutes longer or until cheese is melted. If desired, top with additional parsley.
     

Cheese Manicotti Tips
Do you cook manicotti shells before stuffing them?

This recipe starts with uncooked noodles, which will cook in the sauce while baking.

Can you make homemade manicotti ahead of time?
Yes, you can make manicotti ahead of time! This recipe can be assembled and refrigerated for up to 3 days; just remove it from the fridge 30 minutes before baking as directed. Manicotti can also be assembled and frozen for up to 2 months. To use, partially thaw in the refrigerator overnight. Remove from the fridge 30 minutes before baking. Bake as directed, increasing the time as needed until a thermometer inserted in the center reads 165°.

Pair this delicious manicotti with breadsticks and Italian salad with lemon vinaigrette.

2 stuffed manicotti: 361 calories, 13g fat (6g saturated fat), 64mg cholesterol, 1124mg sodium, 41g carbohydrate (12g sugars, 4g fiber), 19g protein. Diabetic Exchanges: 3 starch, 2 lean meat, 1/2 fat.
