Session 1 (Apr 18): Mediterranean Style Tapas or Mezze
Celebrating my undying love for the flavors from the Middle Eastern & North-African (MENA) region, a Mezze Spread or in other words small plates perfect for dinner parties.
- Cucumbers & Radish Salad with Sumac Onions & Curried Tahini dressing
- Citrus Couscous Salad
- Roasted Saffron Cauliflower & Peppers with a capers dressing
- Cardamom Roasted Pears with whipped ricotta
Session 2 (Apr 25): Sambal Noodles Dinner Spread
For someone who can survive on noodles for every meal, every day, exploring & experimenting with the flavors from South East Asia & East Asia was natural. My dream dinner will be 2 sides & 1 main inspired by flavors from the East.
- Braised Broccolini & Oranges in a Miso-Tahini Sauce
- Charred peppers & tomatoes with Silken Tofu doused in a umami dressing
- Coconut Sambal Noodles with Eggplant, Bok Choy & Sweet Peppers
Session 3 (May 2): Galettes Galore
If I have to pick one meal that’s a complete meal by itself then it has to be Galettes - option to make-ahead, freezer/fridge friendly, satisfying, versatile & rustic the better. Sweet & Savory Galette Duo
- Potato, Leek & Thyme Galette
- Apple Ricotta Galette with a toffee crunch
Note: we’ll make shortcrust pastry from scratch
*Vegan folks: I'll share alternatives ahead of time
Session 4 (May 9): Popular Choice Brunch - Mediterranean or East Asian themed

- Brunch Carrot Tart (inform earlier for vegan alternative)
- Baked Feta shopski style (Bulgarian Classic) OR Roasted Eggplant & Peppers in a spicy tomato sauce (VEGAN ALTERNATIVE)
East Asian Brunch
- Miso Soup
- Soy Maple Brussel Sprouts
- Steamed Choy sum/Spinach with fixings
- Kimchi & Gruyére Skillet French Toast
