Ancestral Recipes Cookbook & Live Cooking Demos

Ancestral Recipes: From My Grandma’s Kitchen To Yours has been designed in collaboration with Borrego Health's patient community in the eastern Coachella Valley. Cookbook recipes, based on MyPlate, were tailored to ensure ingredients are available and affordable. The cookbook is currently available in English and Spanish. Dr. Ann Cheney from UC Riverside School of Medicine will be presenting this cookbook with a community member in the May CFHL, UC Town Hall.

Northern
Central Sierra "Steps It Up" Virtually
  • Qualifying sites in Central Sierra counties were invited to participate in a virtual step challenge for 6 weeks. The challenge started on National Walking Week (April 5) and will end before the school year wraps up. Weekly newsletters are delivered to participants that include tips on safety, stretching, hydration, healthy snacks, and more! Participants will also learn how to track steps, alternative ways of being active and how to share their progress on social media platforms using #StepItUp21.

Placer/Nevada Counties Know How to Make Virtual PA Fun
  • CFHL, UCCE Placer/Nevada Counties’ Nutrition Educator and certified Zumba instructor, Carrie Yarwood, created a Zumba PA break video for the 2021 CFHL, UC Forum. Zumba was one of five different physical activity videos featured at the 4-day virtual Forum in March. Attendees were encouraged to take breaks throughout the day and participate in the PA videos on demand. The Zumba PA break video had 177 views and 8 likes.
  • Deborah Weeks, Nutrition Educator for CFHL, UCCE Placer/Nevada Counties, gets preschoolers active through virtual physical activity lessons. She created a virtual exercise wheel that combines different locomotor movements, colors, and numbers for a fun, engaging physical activity. Teachers have commented that the preschoolers were excited for Mrs. Weeks’ virtual visits and everyone loved getting active. Go to WheelofNames.com to create your own virtual activity wheel.

Tulare/Kings Counties Incorporate PA in Virtual Direct Education Lessons
  • CalFresh Healthy Living, UCCE Tulare/Kings County continues to engage students virtually in physical activity even through this pandemic. Every direct nutrition education lesson incorporates a fun physical activity such as MyPlate Shaky Feast, 12 Days of Fitness, GoNoodle, and interactive scavenger hunts. Through these fun activities, students learn to engage in physical activity every day for 60 minutes!
Kern County’s Virtual Walking Group
  • A Virtual Walking Group was implemented at Fremont Elementary after participants completed the Plan, Shop, Save, and Cook (PSSC) curriculum in February 2021.  After the nutrition classes ended, many participants showed interest in continuing virtual physical activity. The Nutrition Education Supervisor introduced the idea of having a virtual walking group.  Eight parents were interested in joining the group. The school liaison took the responsibility to provide parents with a zoom link and send reminders for the group. The group meets 3-4 times a week to do 20-30 minutes of exercise.  In order to help with sustainability, Kern Nutrition Education Supervisor joins their meetings once a week to provide support, discuss their progress reaching their goals, and how to increase physical activity outside with their families. 
Southern
Imperial County YPAR Class Accesses Pandemic Student Engagement in PA
  • Southwest High School (SHS) Sports Medicine YPAR class surveyed their peers to assess student engagement in physical activity, bike lane access, and student bike safety awareness during the COVID-19 pandemic. The survey received 197 responses from students across the Central Union High School District. A leadership team from SHS Sports Medicine was established to carry the YPAR effort forward. The 7 students named their team the SHS Brain Breakers. The group will present the findings from their survey to stakeholders in Imperial County to help shape policy, system, and environmental change efforts.

During the month of May, National Physical Fitness & Sports Month provides an opportunity to celebrate and promote physical activity and the benefits of sports participation. If You Carrot All - Gardening Updates

Welcome to If you Carrot All, your one stop shop for garden-related information. If You Carrot All will be a recurring segment and will include garden-related resources and relevant information for CFHL, UC Programs.  

Nutrients: N-P-K

Just like we need nutrients, plants need nutrients too! Nutrients provide plants with the strength they need to grow big, strong, and healthy.  Plants take up essential nutrients from the soil to support their growth. The soil serves as a reservoir for three important nutrients including nitrogen, phosphorus, and potassium. 

Because nitrogen is soluble it goes everywhere water goes in the soil. For this reason, nitrogen is the nutrient that needs to be added most often. Nitrogen aids the chlorophyll production which gives the leaves a green color. It also helps make the plants good for us by adding proteins we need to grow and be strong. Phosphorus gives plants strength and contributes to the flowering process. It helps the plant trap and use the sun’s energy to make food (photosynthesis). Finally, potassium strengthens the plants roots helping it to retain water but more importantly it helps a plant fight off diseases and repel insects.

When a plant is harvested it takes the nutrients with it.  We need to remember to put nutrients back into the soil for new plants.

SNAP-Ed Coordinator, University of Nevada, Reno Extension

Classification/Title: SNAP-Ed Coordinator

Duties/Responsibilities: The University of Nevada, Reno is recruiting for a full-time administrative Faculty position as the SNAP-Ed Coordinator. This position will coordinate and oversee the administration of the University of Nevada, Reno Extension statewide Supplemental Nutrition Assistant Program (SNAP) nutrition education and policy, systems and environmental (PSE) change interventions in implementing counties under the supervision of the Associate Director of Extension. The SNAP-Ed Coordinator will have the primary responsibility for the coordination of SNAP-Ed work plan among Extension specialists, county-based staff and faculty, sub recipient agencies and subcontracts; application submission, and reporting in accordance with SNAP-Ed grant requirements; and will assist with planning, guidance, and evaluation.

SNAP-Ed Connection Success Story Submission Process & Template
  • CDSS and FNS have developed a new SNAP-Ed Connection Success Story Submission Process & Template designed to assist all LIAs in writing and submitting national SNAP-Ed Connection Success Stories. The stories typically begin as PEARS submittals and must be reviewed and chosen by the State Office for SNAP-Ed submission. The file is available on the CFHL, UC Publications SNAP-Ed Connection webpage.
  • A Success Story PowerPoint is also available on the CFHL, UC Publications Success Stories and Profiles webpage.

New Data Collection Tools

New Data collection tools for Distance Learning Lessons or Virtual lessons that have a lesson plan and a predetermined lesson time are now available on the CFHL, UC Website on The PEARS Program Activity Page.

Please use the correct form for your age, grade and curriculum. These forms will only collect the number of lessons a teacher or extender has provided to the classroom. The instructions and lesson time guide will provide the number of minutes based on the average minutes of the lesson to be entered into PEARS for the session Length.

Adult Distance Learning Guidance Version 6.0

The Adult Distance Learning Guidance has been updated to include information on reporting EatFresh.org Mini Course including use with High School Students. Updates to surveys in PEARS are also included in this version. This guide can be found on the CFHL, UC PEARS Program Activities Page as well as the CFHL, UC COVID-19 Page.

Many Consumers Don't Know What 'Best If Used By' and 'Use By' Dates Mean

Author/Organization: Megan Poinski, FoodDive
Summary: A study published in the Journal of Nutrition Education and Behavior involving 2,607 U.S. adults found that 64% of survey respondents understood the "Best If Used By" label and 44.8% knew the meaning behind the "Use By" label. After giving survey participants an explanation of each label, 82% correctly stated what "Best If Used By" meant, and 82.4% correctly explained what "Use By" meant. Read more
