5 Week Spring Share
WEEK 1
VEGGIE LIST
Nettles
This is spring's super spinach since it is packed with nutrients that we often deplete over the winter. Be sure to handle with tongs to avoid getting stung.

Salad Mix
This week's salad mix includes various Asian greens that are tender and come in shades of green and purple with lots of flavor.

Green Onion
We grow smaller, tender green onions that seem like a large chive

Sandwich Booster Sprouts
This mix is sweet, crisp and fresh tasting. Goes great in wrap or on salads.

Oregano
Add to your eggs in the morning, make a pesto or salad dressing or simply top any dish with some freshly chopped oregano.

RECIPE OF THE WEEK
This is a go to spring recipe here on the farm and our hope is that it will become one of your favorite spring meals!

Ingredients
  • Bag of Nettles
  • Olive oil
  • 2 Cloves of Garlic
  • 8 Eggs
  • Cheese of Your Choice
  • Veggies of Your Choice

    Directions
  1. Pre-heat oven to 375F while you pour out your bag of nettles into a large bowl to rinse using tongs (not your hands, they sting). Drain off water and then chop roughly with a pair of scissors.  Set to the side.
  2. Chop up any extra veggies such as cherry tomatoes, bell peppers, or mushrooms that you might want to add to your nettle frittata.
  3. Next heat up some oil of your choice on medium heat in a pan that can go into the oven. Add 2 cloves of garlic and your chopped up veggies and saute lightly for about 2 minutes. Then dump in the chopped up nettles and saute for an additional minute.
  4. Next add in 8 eggs or whatever fits in your pan, then sprinkle a cheese of your choice on top, we love using feta for this recipe.
  5. Then place in the oven for approximately 25 minutes or until the center is solid and the top looks slightly browned

    *Adding fresh herbs such as chives or oregano really adds to the spring freshness

Farm Introductions
Hey! We are Courtney & Adam, the farmers that will be feeding you for the next 5 weeks. We have been farming this land since 2010 and have done weekly farm shares since then too. All our produce is grown without the use of chemical sprays and fertilizers. We value the natural world immensely and so everything we can to work with it not against it!
What can you expect in this 5 weeks?

Well, mostly greens but isn't that the best part of spring eating! These shares are smaller than our main season share and the price reflects that. We will try to switch it up from week to week but overall our spring shares will be pretty similar. We will have different salad mixes, herbs, sprouts, spinach, radish, rhubarb, bok choy and other stir-fry greens. We are hoping to sneak in a fruit that last week to end on an extra sweet note.
Every week on Sunday/Monday we will send out this newsletter with a veggie list, recipes &  farm updates. If you have any questions just simply reply to your newsletter and I will get right back to you. I consider all your questions part of the farm share deal, so don't hesitate!
To the right here you see a picture of the salad mix you will be getting in this share. It has been grown in our greenhouse so it has to share space with our baby tomato plants until it is finished doing it's thing and then the tomatoes will take over and grow us delicious tomatoes later into the season. Lots of strategic planning goes into farming too! Hope you enjoy your first share of the season!
