For sauces, add about a cup of balsamic to a saucepan, bring it to a boil, and let it simmer for 10 minutes. The sauce will continue to thicken even after being removed from heat. To salvage a hardened reduction, simply reheat it and add a bit of water. For salad dressings, whisk two parts EVOO to one part Balsamic until it's creamy.
