ROAST CHICKEN IN A DUTCH OVEN

It is a French classic, where chicken is simmered in a covered pot (cocotte) with onions, garlic, herbs, and wine. While the chicken is briefly browned for a richer flavour, it's carved and served without the skin and dressed with a pan sauce. Whether you call it Chicken En Cocette, or Chicken Pot Roast, it's a wildly delicious, foolproof dish.
