THE PYRAMID SHOP RECIPE: SMOKED MACARONI CHEESE
Last week The Pyramid Shop received lots of smoked cheese, so they put together a recipe to use it up - Smoked Macaroni Cheese! The usual cheese to use when making this dish is mature cheddar, but this is a great recipe to use up any cheese that you have to hand. If you have several small bits of different cheese in your fridge then just use them up. All cheese is good cheese!

Ingredients (Serves 4): 250g smoked cheese (grated or chopped into small pieces), 40g plain flour, 40g butter, 500ml milk, 250g macaroni (or other pasta)

Method: Cook the pasta as per the instructions on the packet. Melt the butter in a medium sized pot. Add the flour, stir, and cook for two minutes. Add the milk a little bit at a time, about 50ml to begin with - keeping the pot over a medium heat stir until it has all been incorporated into the sauce. Continue until you have used most of the milk. Stop adding milk when the sauce has the consistency of double cream. Cook on a low heat for a few minutes, letting the sauce gently bubble. It might thicken a bit more. If it does, add a bit more milk. Add the cheese and stir until it has all melted. Taste and add salt and pepper to taste. Combine with the cooked pasta and serve.

The Pyramid Shop is open on Thursdays 5 - 7pm & Fridays 11am - 3pm.
Email sarah@thepyramid.scot for information about joining as a member - and then each week you can do a shop of around 10 items for £3.
