October is by far my favorite month of the year. After a long sweltering summer the return of autumn is so welcome. By the time this email pops up in your inbox my husband I will be soaking in the fall color and vibes in northwest Arkansas. Yay for October road trips! I've been so busy printing and making for my upcoming markets that it's nice to leave it all behind for a weekend.

So, while I promised a pie recipe each month, I didn't consider what I'd do if the pie was not great. So because I ran out of time because we had a road trip to the Ozarks planned, I am sharing this recipe as is with the changes I will make when I bake this again.  To be fair, I don't think this recipe is a total thumbs down, it was most likely the fresh squash texture that was not to my liking.

Full disclosure, I'm one of those people who prefers my pumpkin pie filling straight outta the can. I've never made a pie from a fresh pumpkin that I liked, so it may explain why I am not in love with this butternut squash pie recipe. I chose to roast a whole squash and give it a try. Apparently you can buy this canned. I know I will try it. next time. Luckily I roasted two squash so I have extra puree in the freezer for some other recipe... but not pie.

Oh, and I used ginger, but my heart was telling me to use cardamon. I think it would be a great swap, or add both!

Butternut Squash Pie

1- store bought or deep dish pie crust

Butternut Squash Puree:

1 butternut squash (approx 3 lbs),
or 2 lbs diced squash,
or 2 cups canned squash puree

1 tablespoon unsalted butter, omit if using canned puree

If using a whole squash, slice it in half, and scoop out the seeds and bake for about 30-40 minutes at 350 degrees. If using the prepared diced squash, you can heat them according to the directions on the package.

Once the squash is softened, blend with the butter until smooth.

For the Filling:

2 cups roasted butternut squash puree
¾ cup half & half
2 large eggs
2 tablespoons all-purpose flour
1 tablespoon unsalted butter, melted
¾ cup light brown sugar
1½ teaspoon ground cinnamon
½ teaspoon ground nutmeg
½ teaspoon ground ginger (or cardamon)
1 teaspoon vanilla extract
½ tsp salt

Instructions:

Preheat oven to 350 degrees

1. Add the  2 cups of butternut squash puree to a large mixing bowl.

2. In a medium size mixing bowl combine the brown sugar, flour, cinnamon, ginger, nutmeg, and salt. Stir to combine.

3. Add the eggs and vanilla extract to the butternut squash. Stir to mix.

4. Add the sugar mixture to the butternut squash mixture. Stir to combine.

5. Slowly add in the half & half while stirring.

6. Pour in the pie filling.

7. Bake for about 1 hour 15-20 minutes until the center is no longer wobbling, and a knife inserted in the center comes out clean.

Serve with fresh whipped cream on top and enjoy!

The Halloween Edition:

The Exorcist
Hands down the scariest of movies I ever snuck into as a child. So scary it had me up at night for weeks. This was filmed in Georgetown (Washington D.C.) and one of the favorite spots the locals like to point out are The Exorcist Stairs

The Wicker Man
The original with Christopher Lee. Folk horror masterpiece. I couldn't help think of it while watching Midsomar, which is also very good. Not super scary, but a disturbing fairy tale.

The Amityville Horror
Apparently there were a lot of haunted houses in the seventies. The book was legendary slumber party material. We could not wait for the movie!

The Ring
The story was maybe a little scary, but ti is the slowed down and sped up jerky motions that creeped me out so much.

A font love story.

I made a 12 inch autumn inspired felted pom pom wreath and cannot wait to make a gumdrop inspired one for Christmas.

This vintage inspired tea towel calendar would make a wonderful gift.
