Lamb shares are here! Shares went so fast this spring, that we've decided to partner with another organic farm to increase availability.   The taste testers and picky eaters pictured above give lamb from both farms a big thumbs up!

What's included in a share? Shares from both farms are certified organic, 100% grassfed, totally delicious, and mild.  The shares from our friends at Grassy Gnome Acres are paper-wrapped and also range more in size, so they may be a better option for you if you are short on freezer space.  Just specify at checkout if you have a preference for a larger or smaller share and we will do our best.  Spray Creek lamb shares are vacuum packed and all weigh around 22 lbs.  Click the links below to read more about what's included in a share and place an order!

Winning Holiday Roasts

My family has been quite happy with me the last few weeks, as I have 'tested' all of our best holiday roast options in our home kitchen.  I've cooked beef prime rib, beef crossrib, and pork bone-in loin roasts all using the same, basic method, and they've turned out perfect.  Try it yourself:

• Salt the thawed roast and allow it to sit, uncovered on the kitchen counter for at least several hours before roasting
• Add pepper and roast at 200°- 250°F until the internal temperature reaches 120°F for beef or 140°F for pork
• Remove from the oven and allow to rest, covered, for at least 10 minutes
• Quickly sear on the stovetop or a 500°F oven.
