Every time I think I’m finished shopping I think of something I missed. As I’m writing this, I have another turkey in the oven for tomorrow’s Creamed Turkey Event.
Creamed Turkey
A lot of people say they've never heard of this, but it's a family favorite, and no week after Thanksgiving or Christmas is complete without enjoying creamed turkey over mashed potatoes. It was my favorite meal at the school cafeteria when I was a kid, so I recreated it. Often I roast a turkey just so we can have this. There's no exact recipe, but I'm going to tell you how to successfully make it.
leftover turkey, chopped
leftover turkey gravy
white sauce
Kitchen Bouquet or Gravy Master seasoning
can of cream of chicken soup
How much gravy you have left over and how many you want to serve will decide how much white sauce you need.
I usually melt a stick of butter/margarine, add a couple big spoonsful of flour until it's a paste and then gradually add milk and stir until it's thick. Add salt (I only use Celtic sea salt).
Once you have a batch of white sauce, add Kitchen Bouquet for color and flavor.
Add the can of cream of chicken soup and mix well.
Add leftover gravy and stir in.
Add chopped turkey.
Heat through.
Serve over mashed potatoes with leftover sides. Cranberry sauce is an especially good pairing.
