At Piedmont Pediatrics, there's always a pediatrician on call. If your child is experiencing an illness or injury after hours requiring immediate attention,  you may call 404-351-6662. You will speak with an experienced pediatric nurse from Children's Healthcare of Atlanta. The nurse will answer your questions and address your concerns or you may request to speak with the on-call pediatrician.  We are here for you!

Serve this festive and nutrition-rich salad for a beautiful addition to your holiday meal! Loaded with vitamin C, folate, iron, fiber, and lots of flavor! Serve deconstructed for littles if desired (minus the nuts if under 4). Enjoy! 
 
Ingredients 
  • 1 pound Brussels Sprouts (I recommend pre- shaved to save time)
  • 1 bunch Tuscan kale stemmed and leaves thinly sliced (also available in bag ready to go if desired)
  • 1 lemon, juiced
  • 2-3 tablespoons red wine vinegar
  • 1/2 cup olive oil
  • 2 tablespoons minced shallot
  • 3 cloves garlic minced
  • Coarse salt and freshly cracked black pepper to taste
  • 1/2 cup pomegranate seeds
  • 1 avocado diced
  • 1 cup candied walnuts or pecans chopped
  • Shaved Parmesan cheese for garnish
 
Instructions 
  • If Brussels sprouts are whole, use a mandolin to thinly slice the Brussels sprouts then place them into a large bowl. Add the kale and combine
  • Use a small bowl to whisk together lemon juice, red wine vinegar, olive oil, garlic, shallot, and salt and pepper.
  • Pour the dressing over the Brussels sprouts and kale and toss. Sprinkle the pomegranate seeds, avocado, candied walnuts, and parmesan cheese over the salad and toss to combine all ingredients.
