Recipe of the Week

Roasted Leeks with Parmesan


INGREDIENTS
  • Leeks
  • 3 tablespoons Olive oil
  • 1/2 teaspoon of Salt
  • 1/2 teaspoon of Pepper
  • 1/4 cup of grated Parmesan
 
INSTRUCTION
  1. Preheat oven to 425 degrees
  2. Trim off the hairy bottom of the white part of the Leeks. Trim dark greens, leaving the white and light green part only.
  3. Cut Leeks in half lengthwise, then rinse well and dry. Arrange them in baking dish, cut side down.
  4. Drizzle Olive oil over the leeks and coat them thoroughly with your hands. Sprinkle with Salt and Pepper.
  5. Roast for 20 minutes. Remove from oven, turn cut side up, sprinkle with Parmesan, then continue roasting for about 10 minutes or until fork-tender
