Roasted Leeks with Parmesan
INGREDIENTS
- Leeks
- 3 tablespoons Olive oil
- 1/2 teaspoon of Salt
- 1/2 teaspoon of Pepper
- 1/4 cup of grated Parmesan
INSTRUCTION
- Preheat oven to 425 degrees
- Trim off the hairy bottom of the white part of the Leeks. Trim dark greens, leaving the white and light green part only.
- Cut Leeks in half lengthwise, then rinse well and dry. Arrange them in baking dish, cut side down.
- Drizzle Olive oil over the leeks and coat them thoroughly with your hands. Sprinkle with Salt and Pepper.
- Roast for 20 minutes. Remove from oven, turn cut side up, sprinkle with Parmesan, then continue roasting for about 10 minutes or until fork-tender
