Hi y'all,

With February here, Valentine's season is officially upon us. Whether you celebrate with a romantic partner or friends (personally, I love Galentine's!), Valentine's Day is an opportunity to reflect on the ways in which love is central to your life. At the CEC, love motivates the work that we do—our love for the environment and for everyone who lives in it.

With Valentine's Day on the mind, we wanted to share a couple ideas for how to have a more sustainable holiday, no matter who you're celebrating with. For your date night, consider vegetarian options that center in-season produce: try Claire Saffitz's Meyer Lemon Cake, Hetty McKinnon's Kung Pao Cauliflower, or Yewande Komolafe's Roasted Butternut Squash with Chickpeas. Eating vegetarian can make a big impact on reducing your environmental footprint (2.5x less of a carbon footprint). Plus, if you're looking for a new cute outfit, consider going to Trash to Treasure's clothing swap on Feb 8th! These ideas are just a few ways to celebrate love more sustainably, but do what makes the most sense for you.

See you around this month,
Parker, Claire, Sam, and Sophia
