It’s finally spring, and Happy Family is ready to celebrate the delicious promise of all things sprouting and green. 🌱

We’ve bought ALL THE HERBS, and we’re tossing them with wild abandon at every salad, sandwich, noodle bowl, and rice pot we can find. 

Which brings us to the newest recipe on our community cookbook: Eggplant Bhorta

Anonna Ahmed of Jhal NYC shares her recipe for Bangladeshi Begun Bhorta, or eggplant mash. Known as a satni in her Sylheti home, it features smoky eggplant, fiery chiles, and the pungent fragrance of mustard oil. Plus: herbs! We have it on good authority, AKA the senior Ms. Ahmed, that “it’s not satni without cilantro.”

Anonna also reveals her mom’s sought-after potato version, Aloo Satni, which raises the humble root to fierce new heights. Try both variations and tag us!

In our hearts, we know it’s not spring till the ramps are here. Once they are, we’ll be making Umdhre, a simple, spicy Tibetan Ramp Rice Pilaf. (Don’t forget the yogurt sauce!) The rest of our herb stash might become a Bodiring Salat, an Uzbek potato salad bright with dill and cucumbers, or a verdant sambol to accompany Sri Lankan Fish Cutlets, the beloved tea-time snack of tinned fish.
