Once a niche market, plant-based goods have grown strong in the last few years, especially among the people who want accountability for their ingredients and are nutrition conscious. Vegan-oriented baking can be as satisfying, delicate and airy as regular baked goods, but it comes with its challenges, which is why we are so proud of the numerous vendors at Beaverton Farmers Market, who accept the dare and the results are oh-so-delicious.

Not Bread is a gluten-free seed loaf crafted from organic oats, seeds, honey, and sea salt.

When first trying plant-based recipes, some people may lament the product density, the ingredients not reacting as expected, batter not rising, over-browning, holes and tunneling, etc. The reason for this is that vegan recipes require the right proteins and starches to substitute for ingredients that would be used in traditional baking like eggs or butter. A lot of our vendors also offer gluten-free options, which means that the dough may have different viscosity. While cookies have been reported to be the gateway into plant-based baking as they do not rely on eggs and other animal-based substitutes as much, baking with cake or muffin batter can prove exceptionally challenging, mentioned Allison Leibovich, technical innovation advisor, Cargill, Minneapolis. The thing that plant-based food producers struggle with the most is the stigma that flavor in veganism is an afterthought, thus, many people avoid it. This could not be further from being true and our vendors are on a mission to change your mind. One more reason to appreciate our plant-based alley vendors!



Katy Hebert started her baking business in an effort to protect our animals, and proved that quality pastries don’t have to rely on animal-based products and there’s no compromise on flavor. Find your favorite breakfast goods like croissants, soft pretzels, scones, and so much more! Everyone is invited to have a taste and say “Is it vegan? Really?”


After both of his older siblings went fully vegan, Nate’s mother decided to convert her beloved oatmeal cookie to plant-based, and meticulously, with scientific precision, perfected it over the years. During the pandemic, homesick and bored, Nate decided to pick up his Mom’s recipe and make it for his closest people. The more he baked, the more he loved it, and after expanding his repertoire, we are now grateful to have Nate’s Oatmeal Cookies, fully plant-based, and fully satisfying. Nate now also makes his own plant-based butter for his baking, because, as he shared with BFM, good quality product is hard to come by and very expensive, and he wants to keep his product accessible for the marketgoers.

In Tagalog, “kakaiba” means unusual or eccentric, and Camilla definitely delivers. She is cute as a button, but she comes with a punch! Her cupcakes are delicious and you can find sweet and savory options, plus they have, let’s say, a unique presentation. Don’t miss out on a good laugh and pick up a few of these beauties!

Their allergy-friendly bakery specializes in gluten- and dairy-free goods as well as vegan options. Sinful Confections also collaborates with some of our vendors like Momo Cocoa Co., N2 Coffee & T, and they even offer vegan donuts topped with Thrilling Foods vegan bacon in their shop!

With the strong debut at Beaverton Farmers Market, Clare McLeod has had great success introducing dairy-free Greek-style yogurt to our marketgoers. Through her own journey of self-discovery and while searching for vegan options to reduce her own carbon footprint, she has realized that the store-bought options were lacking in flavor, were packed full of sugar or aromatics to mask poor quality, and had chunky and grainy textures. Since she could not find what she was looking for, she decided to make it, and people can’t get enough! Clare is constantly working on new flavors, collaborating with other peers at the market. She keeps her product clean and honest, with a great push for sustainability, mental health support, and championing local businesses.

100% plant-based Bakon Strips and Bakon Bits are great companions to plant-based cooking, but they will even leave the carnivores satisfied. David Jones, the creator of Bakon™, was on a journey to full-time vegetarianism when he realized that all meat substitutes weren’t doing it for him. Through careful experimentation and science, David came up with an abundance of recipes and meatless options that kept friends and family coming for more. After the breakthrough with Bakon, David started selling at BFM in 2021, and the customer response was overwhelming. Now, you can find Bakon Strips in a number of stores nationwide, but we are still proud to have David with us at the market, so definitely stop by, for a friendly chat, a bite of his fragrant bites, and grab a pack of bakon strips or bits for your vegan recipes.

Like lots of great ideas, this low-calorie allergy-friendly no sugar dessert started as an accident in the kitchen, when Scott Campbell tried to use up some sweet potatoes. Due to his own health concerns, Scott was looking for a solution through food, and with the help of his doctor, found that food can influence how one feels, and so his journey to well-being had started. Finding sugar-free foods in regular stores proved to be virtually impossible, so after tinkering in his kitchen, he came up with a fantastic recipe which is is both satisfying and healthy. Try it as a spread on top of Not Bread, a gluten-free seed loaf crafted from organic oats, seeds, honey, and sea salt, or ask Scott about his numerous ideas on how to use his plant-based pudding.

Started as a way to help out a friend undergoing chemotherapy, Chef Ron’s broth is 100% vegan and keto-friendly but still has all the benefits of “bone” broth. Vegetable broth is slow-simmered for the maximum release of all the nutrients and minerals and can be used instead of any traditional broth in your cooking like soup base, flavorful liquid for pasta or grains, as a mixer for your casseroles. Chef Ron designed his broth for sipping, it makes a great low-calorie snack between meals, warms you up on a cold day, and gives you energy when you need a little bit of pick-me-up.

Organic cashew-based cheese with a great cause behind it. Justin, the founder of Cultured Kindness, learned about the environmental impact and the unethical treatment of animals at a young age and created a product that is only sourced from reliable vendors that do not use animal work. Justin started making vegan cheese as a hobby and had a great response from his friends and family, with whom he shared his product. That encouraged him to start his business, and now you can find his delightful cheese at Beaverton Farmer’s Market every Saturday.



Our plant-based alley welcomes people of all walks and food preferences. We’ve got many more vendors that have vegan-friendly products, so step into the market and explore!

Ajay, supported by wife Gautami, started his cooking business in his own kitchen after finding out that there were people in the area that missed their home country's food. While hoping this would be a great opportunity to decompress and unwind, he soon realized it only added more work to his busy life without much reward. This is when working with charities came to mind, as Ajay was looking for an outlet to better this world and give forward to those in need. In a short span of time, Ajay went from a home cook to having to learn about the business side, licences, and commercial kitchen operations, and finally, he took his chance and applied to be a weekly vendor at Beaverton Farmers Market, and it was a huge success! Selling out of his Shrikhand (a simple but elegant Western Indian sweet yogurt dessert) and Chivda, a beloved savory everyday snack, they have been donating 100% of their proceeds to local PNW charities as well as to charities in India.

We are happy to welcome Food For Tought back to the market and would like to encourage you to show them your support as they are aiming scale up and to start selling their product at the farmers markets around the area and local grocery stores. This month, they will support Anandwan, a charity that works on uplifting people in poverty and educating them on environmental awareness and self-sustainability.

This week at Market Sprouts, we are trying to figure out where our fruits and vegetables grow! Do potatoes grow on trees? Do grapes come from water? Do we dig for our cucumbers? All these silly questions and the real answers to them are at the Market this Saturday!
