There is no one nicer than Allan Benton. He is a curemaster as well. In a small wooden shack in Tennessee Allan painstakingly smokes his bacon in a time-honored Southern tradition. The bacon is Hickory smoked in their smokehouse using an old-fashioned wood stove, so each slice of bacon has a distinctive full flavor. This is a strong bacon that is not to be taken lightly.

A chef's secret: hog jowls! While bacon is usually cut from the belly of a pig, jowl bacon comes from the chin of the pig and boasts deep rich flavor. It looks like bacon, it is cut like bacon and can be treated like bacon. But it just might be a bit sweeter. Every pig has two jowls that weigh about 2 lbs each: some is made into guanciale, others into fried jowl nuggets, but its most succulent method of use is Jowl Bacon.

This bacon is coated with pepper, giving it an extra kick of flavor. Red Wattle has become a food term that describes the very best tasting pork in the world. The farmer Larry Sorell is a master breeder on this pig variety and he has improved upon the genetics he inherited over a decade ago. The curers at Paradise Locker Meats know what they are doing too – they recently won “First Ever Best In Pork Award” at the Missouri Meat Processors Association convention.

Newsom's Old Mill Store and Col. Bill Newsom's Aged Country Hams are owned and operated by Nancy Newsom Mahaffey, "the Ham Lady." Newsom's was established January 1, 1917, by H.C. Newsom, Nancy's grandfather. The business is now into year 95. We love Nancy and think that her cured products out of the Blue Grass State are among the best in the United States. It is rumored that the natural spring waters of Hays Spring are responsible for infusing Newsom's unique flavors. This is a perfect way to end a year of bacon!
