Four Recipes for 4th of July Festivities
Fourth of July is upon us this week! With festivities ahead, we want to offer you four recipes to beat the heat and skip the barbeque this year. Stay hydrated, stay healthy, stay happy.
1. Keep It Simple...
...with strawberry/blueberry-infused coconut water. Crack open a fresh young thai coconut (here's how to!), pour the water into a sealable jar, toss in a few slices of strawberries and whole blueberries, seal the container and place in your fridge. Allow to chill for a few hours as these delicious antioxidant-rich berries infuse your CocoH2O.
2. Toss It Up...
...with a picnic-friendly corn, blueberry, and cucumber salad. With bi-color corn and blueberries in season, this salad is lovely even for the pickiest of meat eaters.
Corn, Blueberry, Cucumber Salad
5 ears fresh sweet corn, husked & shaved
1 pint fresh blueberries
1 cucumber, sliced
1/4 cup fresh cilantro chopped
1 jalapeno, seeded & minced
1 lime, juiced
2 tbsp extra virgin olive oil
1/2 tsp ground cumin
1 tbsp agave
1/2 tsp sea salt
In a serving bowl combine shaved corn, blueberries, cucumber, cilantro, and jalapeno. In a separate bowl, combine lime juice, oil, agave, cumin, and salt. Stir well to combine. Add to salad & toss. Serve and enjoy!
3. Skip The Meat...

Portobello Steaks
4 portobello mushroom caps, stems removed
olive oil
sea salt
black pepper
balsamic vinegar
Gently toss portobello mushrooms with remaining ingredients. Spread on Teflex dehydrator sheets and dehydrate for 1–2 hours, until soft. Enjoy with a side of the corn salad.
4. Make It Sweet...
...finish the evening with a summer sorbet. This recipe can be adapted to fit any fruit you'd like, but this strawberry variation is the perfect sweet ending.
Strawberry Sorbet
1 quart fresh strawberries
1/4 cup agave
1/2 vanilla bean, scraped
Blend all ingredients in a blender until smooth. Strain the purée through a fine chinois/strainer to remove the seeds Pour into your ice cream maker and follow the maker's instruction. Serve with fresh strawberries sliced on top.
